OK, I need some help. I went to a new fish market yesterday (DH and I just moved to a new city)where they sell whole fish that they will filet or whatever for you. Well, I bought some fresh sea trout that were too small to filet, so I told the fish guy to do whatever he could with them. I got home and unwrapped them, expecting them to at least be headless, but there they were, staring at me with their fishy little eyes.
I'm not totally freaked out by the prospect of cooking these heads on fish (they were gutted and scaled), but I don't know how. What should I do with them? I've never cooked whole fish before. Anyone have any ideas? I know that in many other countries this is how they're prepared, so maybe some Mediterranian or Asian recipies would be good. TIA,

This is so funny, because Alton Brown did this on Good Eats this weekend.
He stuffed it with orange and lemon slices and fresh thyme. He then made a paste of 2 lbs of salt for each lb of fish and 4 egg whites. He covered it thickly to make a "concrete" cover. He put it on foil, covered it and then baked it. When done, he took small hammer and gently losened the salt block cover and removed it. He then removed the "essence" and skinned and boned the fish.'

Well, you could Cut off their heads!
And then make some fish stock?

I say blindfold them with a piece of aluminum foil, they won't see what happens next!!
Seriously, guillotine (sp?) them and make fish stock, as Browneye suggested!

As we were watching, I informed DH he would have to chop off any fish heads!
I bought shrimp for 7.99/lb headless, but the same with heads were 4.99/lb...had I known then that DH would have no problem chopping, we would have had cheeper shrimp......
