View Full Version : Can spanokopita be made ahead of time?

Im wondering if I can put it all together on Thursday then refrigerate it until Friday, take it out to room temp, then cook it. Any thoughts???

Kim....I don't see why not! My sister in law makes this all the time for holidays and functions and prepares it the day before, bakes it the next.

Kim, why can't you just bake it, refrigerate, then reheat it on Friday? I think it might get soggy http://www.cookinglight.com/bbs/eek.gif!! Sorry to disagree with Mamasue, but I always bake it first...anyone else have an opinion on this???

We eat it over the holidays reheated -- as it freezes wonderfully after being cooked. A Greek neighbor always indulges my Aunt with large amounts. What a treat

I make this a couple times a year, and I've doubled the recipe and froze one part uncooked. Then thawed it and cooked it. It turns out just great!!! In fact, I've got some in the freezer right now.
SusanL, it's NEVER the same as when you pull it out of the oven. At least, for me. The phyllo isn't as crisy and amazing when reheated, (but it's still delicious).
debg, there have been numerous threads on this recipe! I'm surprised you don't see one. When I have time, I will try to look for you.

So, am I understanding that it has worked to make in advance then cook that day...that would be my preference so it could be hot from the oven!

Spanokopita sounds sooooooo good! Just did a search looking for recipes, but wasn't able to find one http://www.cookinglight.com/bbs/frown.gif Anyone care to post their guaranteed recipe??? TIA

I've done it before, but pre-baked it. Not sure how the phyllo would hold up for a day without baking.
