For the last two years, we've fried the Thanksgiving bird. But both years, the oil boiled over and made a mess, despite the fact that we folloed instructions and put the bird in the pot and filled it with water to see how much oil we need. Any idea what we are doing wrong?

Well, if you are sure that your oil level is not too high, the only other things that I can think of are to 1) lower the bird slowly into the oil and 2) make sure that your oil isn't at too high of a temp.

Make sure the level isn't more than 2" above the turkey. Is your pot big enough? There should be ample space between the top of the turkey/oil to allow for the oil to boil. You need at least q 40qt pot but maybe even a 60qt pot.
