I've recently joined a cooking club & the next meeting is our fav cookie/candy recipe from CL but as a new subscriber & not really a sweets person anyway not sure which are the really good ones! Help!

One of my favorites is Anzac Biscuits -- kind of like a thin, chewy oatmeal cookie.

I'm not sure these are true cookies, but CL's Butter Crunch Lemon Bars are out of this world. Also, my entire family loves CL's Pecan Tassies -- again not a cookie, but both of these might be able to "pass!"

Macadamia Butter Cookies with Dried Cranberries

Amount Measure Ingredient -- Preparation Method

2/3 c macadamia nuts
1/2 c sugar
1/2 c brown sugar
1 tsp vanilla
1 egg
1 1/4 c flour
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp nutmeg
1/2 c dried cranberries
1 tbsp sugar

Preheat oven to 375.

Place nuts in a food processor, process until smooth, about 2 minutes, scraping sides of bowl once. Combine macadamia butter and sugars in a large bowl and beat at medium speed with a mixer. Add egg and vanilla and beat well.

Combine flour, soda, salt, and nutmeg and sitr with a whisk. Add flour micture to bowl and beat at low speed until just combined. Stir in cranberries. Chill 10 minutes.

Roll dough into balls. Dip one side of each ball into sugar. Place balls, sugar side up, on baking sheet. Make a crisscross pattern with a fork.

Bake 9 minutes. Remove cookies from pan and cool on a wire rack.

NOTES : I used 1/4 tsp nutmeg but kept the rest of the recipe the same. My macadamia puree wasn't completely smooth but I had no problem at all with the batter being too crumbly.

I definitely could taste the macadamias in the final baked product. The flavor of these cookies is wonderful! I love the texture, too. There is a slightly crisp outside and a chewy inside.

Two words of warning: do not over bake these, even just a little bit. A few of my cookies were just slightly overbrowned and it seemed as though all the flavor of those cookies was GONE. If anything, underbake them. Also: ignore the part about dipping the fork in water. it isn't necessary and it just dissolves the sugar and makes a mess.
