I found cactus! Need help please.

I actually found some cactus the other day (in the Hannafords in Falmouth, Maine of all places). Now I'm trying to decide which recipe to try. I noticed that RunnerKim (I think) had tried the cactus confetti salad and wasn't impressed. Did anyone else try any of the other April recipes? Also, anyone know how long it will keep in the fridge?

I haven't tried any cactus recipes but the Nopales (the whole cactus paddle), will keep for a week in the refrigerator wrapped in a plastic bag or plastic wrap. http://www.cookinglight.com/bbs/smile.gif Zinnia

Yep, I tried the confetti salad and wasn't impressed. I'm not sure we even finished it, which is unusual for us. However, I would not be willing to say that we prepared it correctly or had the best nopales, etc. I'd had cactus once in a small Mexican restaurant and remembered it being much better, so decided it was something to leave to the knowledgeable or professionals.

I'd love to hear what you try though and how it goes for you.
