View Full Version : Question about mashed potatoes?

Can I do anything ahead of time (i.e. today) to make mashed potatoes tomorrow? I dont' want to do any of the casserole type mashed potatoe dishes, because DH LOVES regular old mashed potatoes. But I am wondering if I can do any of the following today: peel, dice or boil the potatoes? And then finish the job tomorrow? Or will they darken and/or taste weird tomorrow?

Shirley Corriher was on Talk of the Nation an hour ago, and said that you should always make your mashed potatoes ahead of time and reheat at 325 for 40 minutes. I started doing that some time ago and it's a lot less frantic (though her reasoning is that if you start beating/whipping the hot potatoes you're mixing in cool air and instantly cooling the potatoes).
If you don't want to do that, you might peel and cut the potatoes tomorrow morning (I wouldn't do it today) and leave them in cold water until you're ready to cook them. HTH

I just posted on another thread about this...
We always peel our potatoes the day before and put them in a large pot of water. Since we do about 20 pounds of mashed potatoes this makes Thanksgiving Day (and Christmas Day) much easier. We cut them into smaller chunks right before cooking so that they cook faster than if leaving them whole.

Too late to probably help you for TDay, but for future reference, I ALWAYS make my mashed potatoes ahead of time and often the day before. I just reheat in the microwave, adding a little additional milk as need to get the right consistency. Works every time!
