My DH really likes it but I haven't been able to find a good/tasty recipe. Any ideas?

I really am not a fan of Shepherd's Pie, but I found this vegetarian version a while ago, but have not made it yet. Perhaps it will interest you.
Tex-Mex Shepherd's Pie
By The Canadian Living Test Kitchen
2 pounds Yukon Gold potatoes, peeled (about 6)
1/4 cup milk
1/4 cup butter
3/4 teaspoon each salt and pepper
1 tablespoon vegetable oil
2 carrots, diced
1 onion, chopped
1 sweet green pepper, chopped
1 tablespoon chili powder
1/2 teaspoon ground cumin
Pinch cayenne pepper
3/4 cup bulgur
2 tablespoons all-purpose flour
1 1/2 cups vegetable stock
1 cup corn kernels
2 tablespoons chopped fresh parsley or pumpkin seeds
Cut potatoes into 2-inch chunks. In saucepan of boiling water, cook potatoes for about 20 minutes or until tender but not mushy; drain and mash. Blend in milk, butter and 1/2 teaspoon each of the salt and pepper.
Meanwhile, in large skillet, heat oil over medium heat. Add carrots, onion, green pepper, chili powder, cumin and cayenne; cook, stirring occasionally, for 5 minutes or until onion is softened. Add bulgur and flour; cook, stirring, for 1 minute. Gradually pour in stock. Reduce heat to low; cover and cook for 10 minutes or until liquid is absorbed. Add corn and remaining salt and pepper.
Spread in 8-inch square glass baking dish; spread mashed potatoes over top. Sprinkle with parsley.
(Make-ahead: Cover and refrigerate for up to 1 day; reheat covered). Bake in 350°F oven for about 30 minutes or until filling is bubbling. Broil for 2 minutes or until light golden.
Yield: 4 servings

I have this one from my stepmom, who was born and raised in England.
Brown lean ground round with chopped onion. (I use ground turkey.) Once cooked, add 3 heaping TBSP of flour. Stir well. Add 1/2 can of chicken broth with 1/2 can water. Add salt, pepper, and a couple drops of Kitchen Bouquet. A little goes a long way, so be careful. Cook until thickened. Put into casserole dish and top with mashed potatoes. Bake for approx. 30 minutes.

Julie - what is Kitchen Bouquet? Is there a subtitution for it, or can you leav it out?

Kitchen Bouquet is a liquid browning mixture and can be found near the spices. My grocery store isn't the best but I can always find it there so I don't think you'll have trouble. And no, I wouldn't leave it out and I'm not sure what a good substitution would be - to be honest, I'm not sure what's in it.

Hi Sabrinah,
You can use Bovril (Beef flavour) in place of the Kitchen Bouquet.
I have a non-traditional version. It's a tried and true. Hope you like it.
ENGLISH COTTAGE PIE
Serves 6
1 large onion, coarsely chopped
2 tablespoons butter
3 large carrots, finely chopped fine
1 teaspoon fresh parsley
1/2 teaspoon sage
3 cups mashed potatoes
1/2 cup grated parmesan
1 clove garlic, minced
2 pounds ground beef
2 tablespoons tomato paste
1/2 teaspoon chervil
1 bay leaf crumbled
2/3 cup dry red wine
1/2 cup grated cheddar cheese
Preheat oven to 375ºF. Sauté onion and garlic in butter until limp. Add the beef and cook, breaking up the meat until browned. Stir in carrots, tomato paste and all herbs. Add the wine and season with salt and pepper. Simmer gently for 30 minutes. Spoon the mixture into a well-buttered baking dish. Spread the mashed potatoes over top. Mix the cheeses together and sprinkle over the potatoes. Bake 10 minutes until cheese is melted and golden.
Notes: I increase the garlic(we love garlic). I have added chopped mushrooms and peas to mix with great success. Add the mushrooms to the onions at the beginning. Add the peas to the beef mixture during the last 10 minutes of the simmering time. Make sure the mixture has absorbed most of the liquid and drain off any remaining fat before putting it in the baking dish. I start off with lean beef so that there isn’t too much fat after the mixture has simmered. Let the dish rest after you’ve baked it so that it’s easier to scoop out of the pan. It’s quite tasty!

Here is our favorite Shepherd's Pie recipe.
SHEPHERD'S PIE
Source: Next Door With Katie Brown
Ingredients Needed:
2 lbs. Leftover beef from stew or ground beef(meet should already be cooked)
1/2 cup of chopped carrots
1/2 cup of brown onion, chopped
1/2 cup of chopped celery
Leftover mashed potatoes(aprox 2 large potatoes)
1/2 cup of grated Gruyere cheese
1/2 cup of white wine
2 Tbsp olive oil
Fresh Thyme
Italian Parsley for garnish
1.Preheat oven to 250 degrees.
2.Saute carrots, onions, and celery in 2 Tbsp of olive oil and 1/2 cup of white wine.
3.Stir in ground beef over medium heat.
4.Place mixture on bottom of ungreased pie pan(preferable a glass or ceramic pan, but any can be used)
5.Take spatula and slowly spread mashed potatoes over top of mixture.
6.Use spatula to sculpt a design on top of the mashed potatoes.
Sprinkle 1/2 cup of Gruyere cheese on top.
7.Take a couple of sprigs of thyme and place on top of mashed potatoes.
8.Bake in oven at 250 degrees for 10 minutes.
9.Garnish with Italian Parsley.
