Incredibly simple, tastes great. Next time I will use breasts instead of thighs and maybe canned diced tomatoes.

I never cook with chicken thighs (always substitutes breasts), and it seems odd that CL would have a recipe with thighs. Aren't they dark meat, and much higher fat??

Would you serve this recipe over anything besides polenta? I can't stand polenta but the rest of the recipe sounds good.

As for the thigh question, they don't dry out as quickly as breasts do and IMHO they have more flavor. I prefer thighs in some recipes, such as crock pot recipes, as breasts dry out in the crock pot.

I loved this recipe! The thighs are very flavorful and it was simple to prepare. The thighs are a change of pace from the hum-drum ckn breast(Read the article that goes with the recipe for more info. on why to use thighs instead of breasts)

Changes I made:
-canned diced tomatoes, slightly drained (so easy-didn't make a difference in the flavor, liked that I didn't have to worry about quality of fresh tomato)
-microwave polenta
-frozen boned ckn thighs, defrosted (reduced cooking time by 5-8 minutes)

I didn't care for this at all. I used canned diced tomatoes, drained. First, I used chicken breast. I didn't think the dish had much flavor. Second, the polenta was "gummy". I won't make it again. Oh, almost forgot, didn't look anthing like the picture.

I made this for dinner and was very pleased with the results. I used chicken thighs and they had a lot of flavor. I almost used ham instead of prosciutto, but am glad I used the prosciutto in the end. It contributed additional flavor to the dish. I liked the combination of the chicken, sauce and polenta. I used fresh tomatoes instead of canned. The finished product looked very similar to the picture in the magazine. Will definately make this again.
