I need advice in making rice pudding. I've never made it before and I just found a recipe on CL that I would love to try. It's Arroz con Coco. (Cuban Coconut Rice Pudding).
My question is, the recipe calls for 1 cup of rice, but a total of 5 1/2 cups of liquid.
(3 cups of water, 2 1/2 cups of assorted canned milks). It seemed like a lot of liquid to me. When I make plain rice I often use Japanese white, and for each 1 1/2 cups of rice I use only 2 cups of liquid. The pudding recipe calls for the same rice.

I have this horrible feeling that I'm going to end up with arroz con coco soup. Or am I just a rice pudding ninny comparing apples to oranges?

Does anyone have a recipe for chocolate rice pudding? I'd really, really, love that!

I haven't made this pudding but it sounds delicious! The only advice I can offer is that 3 cups of the water are used to 'cook' the rice before adding the other ingredients. Adding the assorted milks, cooking another 15 min. and then chilling it will make the rice absorb alot of the liquids. I hope this helps!

*Chocolate Sundae Rice Pudding
from The Complete Dessert Cookbook by Johna Blinn

2 cups cooked rice
2 cups milk
1/2 t. salt
1 t. pure vanilla extract
1 c. marshmallow cream
1/2 c. chocolate-flavored syrup

1. Combine rice, milk & salt in a saucepan; simmer until thick & creamy.
2. Remove from heat; add vanilla & cool.
3. Fold in 3/4 c. marshmallow cream.
4. Spoon in dessert dishes, top with remaining marshmallow cream and chocolate syrup.

I have seen a recipe for a chocolate version of tapioca, which was simply adding grated choc. to the hot pudding. Don't know why you couldn't try that with your rice pudding.

I made this with my supper club. We used the Arborio rice as stated in the recipie. It absorbs a lot of liquid. The pudding was delicious.

I made this for our supper club as well. I was afraid it was going to be too runny, but once it sets it is fine.

Whoa, Zinna! That's what I call a rice pudding. My nieces and nephew are going to love you!

Thanks eWatkins, I will try adding grated chocolate. I think I'll start by adding it to a basic rice pudding recipe. And I have a large can of Starbuck's grated chocolate that I got as a gift.

Thanks JennieL and slknight for letting me know that the Arroz con Coco recipe works, otherwise I really don't think I would have tried it. And I will use the Arborio rice.

I made this pudding with regular rice since I didn't have Arborio. It sure was tasty! It's on my "keeper" list.
