I wish I could have given this a solid thumbs up, but I'm afraid, much as I like pumpkin cheesecakes...or even just cheesecake...that this is just fair. Nothing bad, nice creamy texture, sinks down to a smallish 3/4" inch high, but while the spicing stands out, the pumpkin flavor is rather meek. Although I don't think using gingersnap rather than graham crumbs made much difference, the just-pour-the-crumbs-in-the-bottom preparation made for a mushy crust. The only other change I made was to use all one-third less fat cc rather than part non-fat, but that had to be an improvement.
Give it a five out of ten. It's hard not to like any cheesecake, but I think next time out I'll dig out one of my older recipes for it.
