I am having a dinner party tonight at 6:30 and am having stuffed mushrooms as one of the apps. Can I stuff these ahead of time and then pop them in the oven last minute? Will they keep like that or will the mushrooms get soggy?
they should keep fine, I always stuff mine ahead of time.... have fun!

In my experience they keep well, up to a point. It also depends on what you're stuffing them with, if it will hold up. I always briefly sautee the caps before stuffing, I think that keeps better than if you stuff them raw. Once washed, raw mushrooms tend to degrade.
just an fyi, I don't think you are technically ever supposed to "wash" mushrooms because they have so much water in them already.... most chefs recommend that you brush them off with a dry cloth or brush...

Cook's Illustrated disproved that myth ... they tested and found that the mushrooms absorbed a neglible amount of water, if any. I have ALWAYS washed them and been happy.

I always find that throwing a thin layer of plain bread/cracker crumbs under the filling helps absorb extra liquid and tastes good, too. But I also like to cook my 'shrooms upside down first, before filling & baking, to get as much juice out as possible.

I had a dinner party last night and I DID premake the stuffed mushrooms several hours ahead of time. They turned out fantastic! I used Lidia Bastianich's recipe which has sauteed chopped mushroom stems, red pepper, and onion (threw a clove of garlic in too) then mixed with cheese and panko. Stuffed em in the caps and dolloped with butter, covered until ready to bake. Then brought to room temp, drizzled with olive oil and...get this....poured a mixture of chicken broth and white wine over all. Then baked for 20 min. pulled out the mushrooms, dumped the sauce in a pan and reduced until a little thick then drizzled over mushrooms and served. The sauce was so good and mushroom-y. Like a good broth! This was officially the first time I made stuffed mushrooms and they were a hit.
