I made this dish last night for our breakfast this morning. I would say we'd give it a 6 out of 10. The 2 quart baking dish I have is kind of deep and round and I should have used one more rectangular. Anyway, because of the dish I used, the egg part didn't really set at the bottom even after the cooking time. We did enjoy the top 1/2 of it, which crisped and bubbled nicely and tasted good.

If I were to make this again w/a different shaped dish, I would also spice it up some more. Perhaps adding more dijon mustard and adding some garlic come to mind.

All in all, it would be worth a shot making this using a different baking dish, because it has potential, and I like the ease of throwing it together the night before and then baking it the next morning.

I made this for Tday morning. We liked it and I would make it again. I did have some leftovers that we ate the next morning....the leftovers didn't go over as well.

Thanks for that bit of advice about the pan, Sue. I get into an inner debate every time I read a recipe that calls for a 2 quart baking dish, wondering if I should go high or flat. Most of the time I've lucked out with my final choice, because I figure if the recipe wanted, say, an 11 x 7, it would say so. Apparently that's not the case here!

Thanks again. You know what a sucker I am for breakfast casseroles! :)

BobYeah, I am too. Anything that can be done ahead of time, or just thrown in the oven in the morning calls out to me!

Not to hijack my own thread, but your signature line reminded me of another funny saying that Miss Paula said recently. She was talking about making something, and said "I'm as excited as a June bride in a feather bed"! I had to LOL at that one.
