Many years ago I had a set of cookbooks from BH&G...every category had it's own slim book (Breads, Cookies and Candy, Desserts, etc), and it seems like there were at least 10 books. In the bread book was a recipe for Sweet Banana Bread, a yeast bread that made a round loaf when baked. Anyone have that set or a recipe that is similar?

TIA!

Mmm, that looks really tasty! But the one I'm thinking of is just a round loaf with no nuts or other goodies. It's much like the round loaves of King's Hawaiian Bread. But thanks for this one!

King's Hawaiian Bread
Recipe By : VJJE Publishing Co.

6 cups plain flour
3 eggs
1 cup pineapple juice
1 cup water
3/4 cup sugar
1/2 teas. ginger
1 teas. vanilla
2 pkg. yeast
1 stick margarine

Beat eggs; add pineapple juice, water, sugar, ginger, vanilla and melted margarine. Put 3 cups flour in a large mixing bowl. Add egg mixture and stir until well mixed.

Sprinkle in yeast, 1 package at a time, mixing well. Gradually add other 3 cups flour. Batter will be hard to mix with spoon. You may have to use your hand. Make sure it's mixed well.

Leave batter in bowl and cover with cloth and place in warm place. Let rise 1 hour.

Remove from bowl and knead in 1/2 cup flour. Knead about 10 times.

Divide into 3 equal parts and place in well greased round cake pans. Cover and place in warm place and let rise about 1 hour.

Bake at 350 degrees 25 to 30 minutes.

Question: Is there any reason I shouldn't do this in the ABM?

I have some of those cookbooks, but not that one. Glad TheGirlsMom has it. I'm interested in seeing that recipe too.

Sweet Banana Bread

5 ½ c. AP flour
2 pkgs. active dry yeast
¾ c. milk
½ c. sugar
½ c. butter
2 ripe bananas, mashed (1 c.)
2 eggs

In large mixer bowl combine 2 cups of the flour and the yeast. In saucepan heat milk, sugar, butter, and 1 teaspoon salt till warm (115-120°),stirring constantly to melt butter. Add to dry mixture in mixer bowl; add banana, 1 egg, and 1 egg yolk (reserve 1 egg white).

Beat at low speed with mixer for ½ minute scraping bowl. Beat 3 minutes at a high speed. By hand, stir in enough remaining flour to make a moderately stiff dough. Turn out on floured surface; knead till smooth (5-8 minutes). Place in greased bowl; turn once. Cover; let rise till double (about 1 hour). Punch down. Divide in half. Cover; let rest 10 minutes.

Shape in 2 round loaves. Place on greased baking sheets. Make vertical cuts about 1/8 inch deep around each loaf at ¾ inch intervals. Combine reserved egg white and 1 teaspoon water; brush tops. Let rise till double (30-45 minutes). Bake at 400° for 30 minutes. Makes 2.

Enjoy!
