I loved the Chocolate Mousse made with tofu from the May '01 issue. Having a glut of strawberries on hand prompted me to remake the dessert using about 3/4 cup of sliced, sweetened strawberries in place of the melted chocolate. I let the strawberries sit in about a tablespoon of sugar until they were syrupy, then put them in the blender with the tofu. All of the rest of the directions and ingredients in the recipe remained the same. The resulting pink mousse is delicious!

I have an update on the strawberry mousse. I must admit that when I made the post, my remarks were made after licking the spoon after putting the mousse into dessert glasses. Now that I have eaten the mousse, there was a little water in the bottom of the glass. Could be that I overbeat the egg whites, or that the fruit acidity reacted some with other ingredients. If you don't mind a little weepage, the taste is still great. And the best part is the soy benefit!
