View Full Version : Salmon Lovers - Copper River Salmon!!

WOW, what an absolutely delicious salmon! If you don't know about it, it is only available once a year (from Alaska) and there are limited supplies at the grocery store. Well, they are always out when I go to the store so my manager was kind enough to buy me (actually, she had her husband go and buy it!) an almost 1-lb fillet. I used a Greek type marinade and baked it and now I can't stop going back to the darned casserole and nibbling. It is going to be gone before my son can try it! Anyway, if you have a chance, try this particular salmon. The color is amazing - a vibrant, dark orange and that description doesn't do it justice. I happened to make salmon I bought at Trader Joe's a couple of nights ago and now I can't see buying that any longer! The tastes and textures are so different. OK, enough about Copper River Salmon, I need to go have another little nibble...just a little!! http://www.cookinglight.com/bbs/biggrin.gif

Absolutely ! This is the best salmon I've ever eaten. Last week it was $ 15.99/pound and this week it is $ 9.99/pound. I'm gonna have some tomorrow. I'm planning to prepare the recipe in the march issue (with the sesame and spices crust, I love this recipe). You have to be careful though to avoid overcooking it because it is not greasy like the usual salmon and has a tendancy to dry when overcooked. Can't wait !
