View Full Version : Ice Cream Bread?

So my friend just sent me the following recipe:
Ice Cream Bread
1 pint ice cream (any flavor}
1 1/2 cups self -rising flour.
Let ice cream get soft (stir-able) and blend with flour. Pour into a loaf
pan (sprayed with Pam). Bake at 350 for 40-45 min.
The question is, what flavor of ice cream would be good for this? Something about Mint Chocolate Chip (my favorite ice cream) bread sounds, well, disgusting.

So I'm right in thinking this is more of a dessert bread or maybe breakfast?
I can't decide if Chocolate would be totally nasty or if it would be good. What do you think?

Ok, I asked my friend and she said she made it with Cherry Fudge Truffle and Dulce De Leche. She said they turned out really good.
I'm not sure what to gather from the SL thread...there were raves and eews.
I'm gonna give it a shot...whatever kind of ice cream strikes me at the store. Anyone else feeling brave?

Haha :) I have mixed feelings about it. It's a 2 ingredient recipe...so I kind of want to give it a chance to be good, because if it's good & easy I'll feel like I've won. But then again....putting a cup and a half of flour into perfectly good icecream might make me cry.
I'll test it on my work guinea pigs tomorrow and let you guys know the concensus.

Ooh, ooh! I was so excited to see this thread b/c I have a great recipe for Ice Cream Muffins...........
2 cups melted Maple Walnut or Butter Pecan Ice Cream
2 cups all purpose flour
1 tsp. baking soda
1 tsp. baking powder
2 Tblsp. milk
Combine melted ice cream, flour, baking soda & powder in mixing bowl. Whisk until smooth, adding milk for desired consistency. Spoon into greased muffin cups, filling 2/3 full. Bake in a pre-heated 350 degree oven for 14-20 minutes until muffins test done w/cake tester or toothpick. Cool slightly, then remove to wire rack to cool completely. Makes 12 muffins.

Ok...I made two loaves of this bread...Butter Pecan and Dutch Chocolate.
And the verdict is.....EEEEEEEWWWWWWWWWW!!!!!!
Both are currently residing in the garbage. I'm not even subjecting my willing guinea pig co-workers to them. The texture was about what I expected, like a dense quickbread. I guess the addition of the flour sucked all of the flavor out of the ice cream though. They weren't bad, they were perfectly edible...just very blah.
I'm de-friending the girl who gave me the recipe. It's sad too, I still want to try the "poor man's turtles" candy recipe she gave me. Can't turn out as bad as this, can it?
