This is featured on this weeks main page, under "Dinner in the Fast Lane". It was fast and very easy. It is a great idea for using the extra blue cheese I had in the fridge. My family enjoyed the meal.

Fettuccine with Blue Cheese-Artichoke Sauce

Tossed Apple Salad and soft breadsticks complement the pasta.

Grocery List
1 (8-ounce) package sliced fresh mushrooms
1 (10-ounce) package romaine lettuce
1 Red Delicious apple
1 package soft breadsticks
1 (14-ounce) can quartered artichoke hearts
1 bottle fat-free balsamic vinaigrette
1 (10-ounce) container refrigerated light alfredo sauce
1 (9-ounce) package refrigerated fettuccine
1 (4-ounce) package crumbled blue cheese



Fettuccine
1 (9-ounce) package refrigerated fettuccine
Cooking spray
1 (14-ounce) can quartered artichoke hearts, drained
1 cup sliced fresh mushrooms
1 (10-ounce) container refrigerated light alfredo sauce
2 tablespoons crumbled blue cheese

Fettuccine with Blue Cheese-Artichoke Sauce
Total time: 15 minutes

1. Cook pasta according to package directions, omitting salt and fat.

2. While pasta cooks, coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add artichokes and mushrooms; cook 3 to 4 minutes or until mushrooms are tender. Add alfredo sauce to artichoke mixture; cook until thoroughly heated.

3. Place drained pasta in a large bowl. Pour sauce mixture over pasta; toss to combine. Sprinkle with cheese. Yield: 4 (1 1⁄4-cup) servings.

Tossed Apple Salad
Total time: 5 minutes

1. Combine 1⁄2 (10-ounce) package romaine lettuce and 1 cup diced Red Delicious apple in a bowl. Drizzle with 1⁄3 cup fat-free balsamic vinaigrette. Yield: 4 (1 1⁄4-cup) servings.
