If any of you could help me with this question...
I made the pecan sandies recipe from December's issue (Cookie Swap), but they turned out very hard, not tender. Can anyone suggest what I could try differently to get more tender cookies? I wanted to give these as gifts but not as hard as they are! :)

I am not going to be much help either, but I will say that if there is one cookie that wouldn't lighten up well, it would be a pecan sandie. Pecan Sandies are so tender and crumbly due to the high butter content, and then there is the fat from the nuts. So I am not surprised at all that the CL recipe isn't that great. Since they are going to be for gifts, I would go with a full fat recipe such as the one Ms. Chevious mentioned.

Yeah, a pecan sandie is just a form of shortbread ... and what makes it "short" (like shortcakes) is the high butter/fat content and not a lot of moisture. The less fat, the drier they will be.

Glad I am not the only ones that had problems with these last night. What a pain in the butt to make. My dough would not really shape into balls and when I tried them I was so shocked that they were hard. My DH and Sister said they were fine to give out, but I have my doubts. What a waste of time. Grrrr!!

Toss them in your food processor and give them a whirl. Then use them to top ice cream.
Or use as a cookie base to a cheesecake (with additional melted butter).
Freeze the crumbs for later and there will be not waste.
