Any suggestions for a light Peach Cobbler or Peach Pie? I need a recipe for a supper club get together. I haven't been able to find a light recipe that I like. Thanks http://www.cookinglight.com/bbs/smile.gif

Michelle-This is not a CL recipe. My students (I am an English teacher) did a unit on family history and then we made a class cookbook with family recipes. One of my students submitted what looks to be a delicious recipe. I have not tried it bc I am allergic to peaches, but have been meaning to try it with blueberries. Let me know if you like it!
1/4 cup butter
1c sifted all purpose flour
1 c sugar
1/8 tsp salt
1 tbs. baking powder
2/3 c milk
2 cans sliced peaches (I would assume you could use fresh ones!)
1/4 tsp. nutmeg
1/4 tsp cinnamon
1/2 tsp. lemon zest
Melt butter in a 7x11 dish. Sift together dry ingredients; add milk and stir well. Pour this mixture into the baking dish; do not stir. Top with peaches, including juice. Sprinkle nutmeg, connamon, and lemon peel over peaches, but do not stir. Bake at 350 for 40 minutes or until golden brown. Serves 6-8.

Susann's recipe looks delicious!! Don't think you need another recipe, but if you're interested, CL's July issue has a recipe for a brown sugar peach pie with coconut streusel (or something to that effect). If you don't have your July issue, I could post this for you tonight.

Michelle, I came across this recipe in my Better Homes and Gardens cookbook just yesterday when I was looking for a peach pie recipe to take to a party July 4th. I have not tried it yet but I thought it sounded so good I am seriously considering this one.
Peach Tart
1 cup all purpose flour
1/4 teaspoon salt
1/4 cup chilled margarine
2-4 tablespoons cold water
1/2 of an 8 ounce package reduced-calorie cream cheese, softened
2 tablespoons sugar
1/2 teaspoon vanilla
4-5 medium peaches, peeled, pitted and sliced
1/2 cup low-calorie apple jelly
For pastry, in a mixing bowl combine the flour and salt. Cut in the chiled margarine till pieces are the size of small peas.
Sprinkle 1 tablespoon of the cold water over part of the mixture. Toss with a fork. Push to the side of the bowl. Repeat till all of the mixture is moistened. Form into a ball.
On a lightly floured surface roll pastry into a 12 inch circle.
Wrap pastry around the rolling pin. Ease into an 11 inch flan pan. "Do not stretch"
Press pastry 1/2 inch up the sides of the pan. If necessary, trim pastry even with the top of the pan. Pierce bottom of crust well with tines of a fork.
Bake in 450 degree oven for 10-12 minutes or til golden. Cool on wire rack.
Meanwhile, in a small mixing bowl stir together cream cheese, sugar, and vanilla till smooth. Spread atop cooled crust. Arrange peach slices in circles atop cheese mixture.
In a small saucepan heat apple jelly till melted. Spoon atop peaches. Chill at least 2 hours. Makes 12 servings.

Here is a recipe I made last summer. I got it from the SOAR website. It's a keeper. AND it just so happens that it is low fat. I doubled it and made it in a 13x9 pan. Two things, though. First, they left out the sugar in the topping, so I guestimated it to be 1/2 cup. Seemed to work fine. Also, the next time I make this, I will add a tbsp (to the doubled recipe)or so of instant tapioca to the peach mixture. There was way too much juice, so after a day or so it got a little soggy on the underside. I had never used tapioca until I made a blueberry pie recipe last Thanksgiving that called for it and it worked wonderfully, so I figure it would work for this. Here it is..............

Old fashioned Peach Cobbler

1/2 c light brown sugar -- packed
1/2 tsp cinnamon
1 tsp lemon zest -- grated
1 tbsp lemon juice
4 c peaches -- peeled and sliced
3/4 c all-purpose flour
1/2 c whole wheat flour
1 tbsp baking powder
1/4 c margarine or butter
1/2 c sugar
2 egg whites -- beaten
1/2 c milk
1/2 tsp vanilla
Preheat oven to 375. Lightly greast 8x8x2 baking dish. Combine brown sugar, cinnamon, lemon rind and juice in large bowl. Add peaches; toss to mix. Transfer to prepared baking dish. Combine flours and baking powder on a piece of waxed paper. Beat together butter and sugar in a med. bowl until light and fluffy. Beat in egg whites. Add dry ing. alternately with milk and vanilla, stirring just to combine. Drop batter by spoonfuls over peach mixture; spread gently. Bake for 25-30 min or until peaches are tender and crust is golden. Serve warm.

This is an old Kentucky favorite. It can be lightened by using light butter or margarine. The crust comes to the top as it bakes. It is good with most any fruit. We especially like it with blackberries.

1 stick butter
1/2 cup sugar
2 cups fruit
1 cup sifted all purpose flour
2 teaspoons baking powder
1 cup sugar
1 cup milk
pinch salt
Set oven for 350. Place butter in baking dish too melt.
Mix 1/2 cup sugar with 2 cups of fruit. Set aside.
Make a batter of flour, baking powder, sugar, milk, and salt. Pour batter over melted butter or margarine. Do not stir.
Place fruit mix on top of batter. Bake for about 40 minutes. About 1/2 hour before removing from the oven, sprinkle sugar over top.

Wow!....the suggestions sound great...I will try one or two on my family this holiday weekend as everyone will be in town. My sister has been my taste tester for the last couple of weeks...good thing she likes peach cobbler. Thanks for the recipes. Has anyone else tried Instant Clearjel? I buy it through the King Arthur Baking Catalog and it really beats cornstarch and tapioca as a thickener. I highly recommend this product!
