Another winner here. MY DH is a Spanakopita lover and this version with Butternut squash was definitely a hit. It was also easy (as long as you had a food processor to grate the butternut. The seasoning was perfect and it really looked attractive (would be great for company). this would make a good vegetarian main dish or a substantial side. (We had it with the Orange-Maple Marinated Pork Loin and it made a great combo.)

We liked this, too, but we (DH) grated the squash by hand, so it was sort of a pain. I didn't even think about using the food processor. :o The mint is also pretty strong in the dish, so you'd have to like it to like this one.

I "sort of" liked this - I think the mint was a little overwhelming for our tastes.

We made this last month at our Supper Club dinner. Instead of making one large pie, we made small, apppetizer size pies using the premade phyllo cups. We all like this recipe, even me - the butternut squash hater!!

Wow! I had no idea this recipe was from 2005! Guess it's been sitting in my binder a long time! :rolleyes: But, a perfect time of year to bump it up for any newcomers!
Made this last night for dinner. Have to agree, grating the squash by hand was a major pain; I believe I lost a bit of skin and nail in the process! :eek: The end result was OK, a little on the different/odd side. I wondered why the 1/4 of bulgar, felt it didn't lend anything to the dish, there was too little. Was a bit overwhelmed by the mint as well, I didn't measure, so I think I had less than a 1/2 cup, and felt it overpowered the dish.
I have leftovers for lunch today, we'll see how it holds up. Not a repeater, but glad I finally made this. Was a lot easier than I thought it would be, I sometimes am afraid of phyllo! :)
