I love scrambled egg whites in a tortilla for breakfast but I find that when I go to bite into it, it spews water. I do add salt and pepper while cooking. How do I stop this from happening?

I have that problem, too. Have you tried adding a little milk and mixing really well before you cook the eggs? I've had a little success with that. Sometimes I just mix in half a yolk, too. Seems to help a little

I did scrambled egg whites for three weeks last month! Two egg whites with 1 TBS water worked just wonderfully scrambled. Any more than that and the texture was off!
