Hi-

i am going to try and make the cranberry pepper jam this weekend and would like to *** chopped red and green bell peppers-will this cause a problem? Terri _A, I noticed that you have made a lot of Cranberry Pepper Jelly-is your recipe the same as this one? Thanks in advance for any help provided!

Here is the recipe-
1/2 cup jalapeno peppers, coarsely chopped
1 1/2 cups cranberry juice cocktail
1 cup vinegar
5 cups sugar
1 liquid fruit pectin (in a foil pouch)

Wash hot peppers, cut off stem and halve the peppers, remove membrane and seeds.
Put peppers in food processor and process off and on a couple of times until the peppers are coarsely chopped.
In a medium saucepan combine peppers, cranberry juice, and vinegar.
Bring to boiling; reduce heat. Cover and simmer for about 10 minutes.
In a 4 quart pot combine the pepper mixture and sugar.
Bring to a full rolling boil over high heat, stirring constantly.
Stir in pectin.
Return to a full rolling boil; boil for 1 minute, stirring constantly.
Remove from heat. Quickly skim off foam with a metal spoon.
Pour at once into hot, sterilized half-pint jars, leaving a 1/4" headspace. Wipe jar rims; adjust lids.
Process in a boiling water canner for 5 minutes (start timing when water begins to boil). Remove jars and cool on a wire rack till set (2 to 3 days).

I'm assuming that you meant to say "add" red and green bell peppers and hit the wrong key on the d. I make pepper jelly with the bells and I think the variety of peppers give better flavor -- shouldn't hurt anything at all. You won't really see the colors that well though.

I think that may be the recipe I made once. It didn't set as well as my regular recipe, but that happens sometimes. Since I haven't made it again, I can't say for sure. I think a number of people have made it with good results, so I suspect something in my batch was off.

If you want to see the red and green peppers, make plain pepper jelly and use lots of color in the peppers rather than the jelly. You can even use red and green jalapenos and some other peppers.
