I have an office holiday potluck tomorrow, and I was going to resort to making toll house cookies from sheer lack of inspiration. But maybe I can do better with your help...
I have 2 sticks of butter softened already, a bag of semisweet chips, a bag of butterscotch chips, and most basic baking supplies at the ready- minus baker's chocolate of any kind, but I do have cocoa.
Any ideas?

Butterscotch Gingerbread Cookies
Butterscotch morsels add their sweet creaminess to this classic gingerbread cookie. The ultimate treat, warm from the oven with a glass of cold milk.
Estimated Times:
Preparation - 15 min | Cooking - 9 min | Cooling Time - 15 min cooling | Yields - 2 dozen cookies
Ingredients:
3 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
3/4 teaspoon ground cloves
1/2 teaspoon salt
1 1/2 cups packed brown sugar
1 cup (2 sticks) butter or margarine, softened
1/3 cup mild molasses
1 large egg
1 2/3 cups (11-ounce package) NESTLÉ TOLL HOUSE Butterscotch Flavored Morsels
Directions:
PREHEAT oven to 350° F.
COMBINE flour, baking soda, cinnamon, ginger, cloves and salt in small bowl.
BEAT sugar, butter, molasses and egg in large mixer bowl until creamy. Gradually beat in flour mixture until well blended. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

These chocolate-coated, butterscotchy, crispy treats are so good they'll be a sure-fire hit with your family. So easy, you can whip them up in a snap.
Estimated Times:
Preparation - 10 min | Cooking - 4 min | Cooling Time - 30 min refrigerating | Yields - 24 bars
Ingredients:
1 package (11-oz.) NESTLÉ TOLL HOUSE Butterscotch Flavored Morsels
4 cups toasted rice cereal
2 packages (11.5-oz.) NESTLÉ TOLL HOUSE Milk Chocolate Morsels, divided
Directions:
GREASE 13 x 9-inch baking pan.
MICROWAVE butterscotch morsels in large, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Stir in cereal and 1 cup milk chocolate morsels. Press evenly into prepared baking pan.
MICROWAVE remaining milk chocolate morsels in small, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Spread evenly over mixture in pan. Refrigerate until firm. Cut into bars.

those butterscotch gingerbread ones are great. here are the notes I have on them in my mastercook.
excellent!! the cookies are nice and thick. crisp all over the outside and buttery chewy and dense inside. the spices are just right and go nicely with the butterscotch chips. Could also use real white chocolate chips or chunks here and they would be fabulous. and they keep very well. in fact, I think I like them even better after they have had a chance to mellow for 6 hours.

Val - that Butterscotch Gingerbread cookie recipe appears different than another one I copied from a different thread (credited to you). Not sure if there are other differences besides this but I believe in that one you chill the dough. Is this the same recipe or are there multiple Butterscotch Gingerbread cookie recipes floating around out there? - Jen

These are SO-O-O GOOD!!. My mom has made these every Christmas for years - because if she doesn't there is always a request... Such a simple recipe, but SO GOOD.

Well, I looked at the Nestle website, and luckily, I had a full bag of shredded coconut and a can of sweetened, condensed milk on hand. Chocolate "macaroons" it was. Quick, simple...
Wish I'd checked back in here before I proceeded, though- those recipes look great!

the recipe is one and the same. the only difference is that I chilled the dough and made my cookie dough balls golf ball sized.

Thanks, Val. Slight Hijack - if you to make a butterscotch cookie for your cookie tray, would you make these or the White Chocolate Butterscotch Oatmeal Chippers posted by Sadie (I think). I was originally going to make KA's Double Butter Bars as my butterscotch addition but now I'm leaning towards a cookie instead. (This is because the Pumpkin Fudge I made is so light in color that I'm afraid the two bars would look too similar.).

I can't really help... I loved both cookies. I guess it depends on your tastes -- whether you prefer white chocolate or gingerbread more.
anyway, you can't go wrong with either.
