DH's best friend is allergic to egg whites. We are spending New Year's weekend with he and his wife. I would like to bake/bring goodies as a thankyou/hostess gift.

Can I just double up on the egg yolks in a recipe, 1 egg = 2 egg yolks?

Any ideas?

The wife has breast cancer and is not doing well. She needs to eat more protein, but she doesn't have much appetite.

If they are allergic to egg whites, they may very well be allergic to eggs in general. You might check for more details, or just ask what types of desserts he enjoys. The standard sub IS 2 yolks for every egg called for, but I'm not sure cookies made with yolks only would turn out. Here's an article from WebMD: http://www.webmd.com/content/article/61/67463.htm

What about something eggless, such as a cornstarch-based pudding or pie made with pudding? Or candy (i.e., fudge?) Or something like sweet/spicy nuts?

Here is a cookie recipe that doesn't use any eggs at all. They are similiar in taste to a mexican wedding cake.

Potato Chip Cookies


1 cup butter

1/2 cup granulated sugar

1 3/4 cups sifted flour

1/2 cup chopped pecans (optional)

1/2 cup crushed Jays Potato Chips

1 teaspoon vanilla

Cream butter, sugar and flour thoroughly. Add rest of ingredients. Place ? to ? teaspoon dough on ungreased cookie sheet ? about 2? apart.

Bake at 350 degree oven about 10 ? 12 minutes.

Cook and sprinkle with powdered sugar.

Makes about six dozen miniature cookies. Store in tightly covered can.

I wouldn't risk using egg yolks, as some of the whites still cling to the yolks when separated.

If you can find it in a health food store near you, try using Ener-G Egg Replacer (http://www.ener-g.com/store/detail.aspx?sn=MilkAndEggSubstitutes&id=97&cat=8). I use it when baking for my vegan brother.

Otherwise, I'd suggest making recipes without eggs. Many scone recipes don't use eggs. Some other egg-less recipes we've enjoyed:
