OK, I am having a really hard time finding a recipe for a breakfast casserole that sounds appetizing. I want it eggy, meaty, & cheesy. I am starting to think about just throwing some chunked up bread in a casserole with some cheese, canadian bacon, and green onions, covering it in milk & eggs and throwing it in the oven. But what kind of bread and how long do I cook it & at what temp? Help?
And by all means, if you have a recipe that you just love, post it!

Search This Thread for Strata & you'll find quite a few. How'd the pasta turn out? I had leftover spinach & tomato pasta in the freezer. It thawed out beautifully so I made fettuccine with scampi - Ida's great recipe. Would be a pretty dish for Christmas with the red and green pasta.

Sweetpea and I just made this on Saturday!!! It was sooo good. Chelle D posted it a while back.

SAUSAGE AND EGG CASSEROLE WITH SUN-DRIED TOMATOES AND MOZZARELLA

A satisfying, easy dish that's also versatile: Accompany with sliced melon and some assorted pastries for brunch, or with a green salad and warm focaccia for dinner.

1 pound Italian sweet sausage, casings removed
1/2 cup chopped shallots
2 garlic cloves, minced
1/2 cup chopped drained oil-packed sun-dried tomatoes
4 tablespoons chopped fresh parsley (didn't use)
5 large eggs
3 large egg yolks
1 cup half and half (we used FF half and half)
1 cup whipping cream (we used FF half and half)
2 cups grated mozzarella cheese
1/2 teaspoon salt

Preheat oven to 375°F. Butter 13x9x2-inch glass baking dish. Sauté sausage in medium nonstick skillet over medium heat until brown and cooked through, breaking up with back of fork into small pieces, about 10 minutes. Add shallots and garlic and sauté 3 minutes. Add sun-dried tomatoes and 2 tablespoons parsley; stir 1 minute. Spread sausage mixture in prepared dish. (Can be made 1 day ahead. Cover and refrigerate.)

Whisk eggs, egg yolks, half and half, whipping cream, 1 1/2 cups cheese, and salt in large bowl to blend well. Pour egg mixture over sausage mixture in dish. Sprinkle remaining 1/2 cup cheese and 2 tablespoons parsley over. Bake until top of casserole is golden brown and knife inserted into center comes out clean, about 30 minutes. Let stand 5 minutes before serving.

Makes 8 servings.

Would you be interested in a Mexican-style overnight strata - "Chilaquiles Casserole" with eggs, cheese, etc, and with (or without) chicken?

ADM, please post your mexican strata. It sounds interesting! This is what I'm making; Strata
12 slices french bread
2 cups grated cheese
2 cups sausage
8 eggs
2 cups milk
1/2 cup melted butter
Grease an 8X12 inch pan. Cube bread and put 1/2 on bottom, cover with 1/2 cheese and meat. Repeat. Combine eggs&milk and pour over bread. Drizzle butter on top. Cover and refrigerate overnight. Bake 325 degrees 1 1/4 hours. Uncover the last 15 min. to brown.

Chilaquiles Casserole -

8 large eggs
1 15 oz can cream-style corn
1 4.5 oz can chopped green chilies, undrained
2 cups small-curd cottage cheese, drained
1 cup milk
1/2 teaspoon pepper
6 6" corn tortillas, cut into 1" strips
4 oz cheddar cheese, shredded

Combine first 6 ingredients. Stir in tortilla strips and cheddar cheese. Pour into a greased 13x9x2" baking dish. Cover, chill 8 hours, or overnight. Bake 350 degrees, 45 minutes, or until set. Let stand 15 minutes before serving.

[2, or more, cups cooked chicken, chunked, or shredded can be added.]

Based on 12 servings (without chicken added) 128 calories; 7.5g fat, per serving.

Sounds just like the farmer's casserole that Grace posted back in 2000 (and a dish that has now become a family traditon around here...'cept I sub breakfast sausage for the ham/bacon since I serve a honey-baked ham as well).

Farmer's Casserole

SOURCE: Better Homes and Gardens YEAR: February PAGE: 208

INGREDIENTS FOR 6 SERVINGS:
3 cups frozen shredded hash brown potatoes
3/4 cup shredded Monterey Jack cheese wit hjalapeno peppers or shredded cheddar cheese (3 ounces)
1 cup diced fully cooked ham or Canadian bacon
1/4 cup sliced green onions
4 beaten eggs or 1 cup egg substitue
1 (12-ounce) can evaporated skim milk
1/4 tsp. pepper
1/8 tsp. salt

INSTRUCTIONS:
Grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of the dish. Sprinkle with cheese, ham and green onion.

In a medium mixing bowl, combine eggs, milk, pepper and salt. Pour egg mixture over potato mixture in dish (The dish may be covered and refrigerated at this point for several hours or overnight.) Bake, uncovered, in a 350º oven for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) or till center appears set. Let stand 5 minutes before serving.

Yield: 6 servings

NUTRITIONAL INFORMATION:
Calories 247 Fat 12g Protein 18g Carbs 18g Sodium 516mg

Thanks to all! Please keep em coming. I'm looking for similar dishes. Don't have to have meat in them, for me at least. (Am I hi-jacking this thread?)

Mornings are not a fun time to eat (for me) and it would be nice to have something that looks good, can be made ahead, and can microwave after...and then my husband (he who is up at 6am and eats OATMEAL) can reheat some for lunch.

this is from this month CL I am making it for christmas morning. And I have benn wanting to make that farmers casserole

Bacon, Gruyère, and Ham Strata

This casserole is easy to prepare, especially if you purchase diced ham from your supermarket. Gruyère is a type of Swiss cheese. Its sweet nuttiness enhances this dish, though you can substitute Edam, Gouda, or even cheddar cheese.


2 cups fat-free milk
1 cup chopped green onions
1 cup egg substitute
1 tablespoon Dijon mustard
1/4 teaspoon ground red pepper
12 ounces sourdough French bread, cut into 1/2-inch cubes (about 10 cups), toasted
3/4 cup diced ham
Cooking spray
1 cup (4 ounces) shredded Gruyère cheese
4 bacon slices, cooked and crumbled (drained)

Combine milk, green onions, egg substitute, mustard, and pepper in a large bowl, stirring with a whisk. Add bread cubes and ham; stir well to combine. Pour into a 2-quart baking pan coated with cooking spray. Sprinkle with shredded cheese. Cover and chill 8 hours or overnight.
Preheat oven to 350°.

Uncover dish, and bake at 350° for 20 minutes. Sprinkle with bacon. Bake an additional 15 minutes or until bread mixture is set and cheese is bubbly.

Yield: 6 servings

Pampered Chef has one that uses hash browns and some kind of meat, eggs and cheese. I have misplaced my cookbook. If anyone has that one to post, it would be a welcome addition to this thread. Darla
