I would love to serve her TNT rec for Vegetable Curry tomorrow night to my DBF after our squash game. My thinking is that I'd make the curry tomorrow morning, then just reheat and cook the rice after our match. Unfortunately, my copy of the cookbook is 100 miles away, and the local library doesn't own it.
If anyone has this recipe in MC, would they kindly post it???

I don't have MC so I don't have any nutrition info or anything like that, but I do have the recipe - this is one of my favorites! (Well, that and nine thousand others...)

Jane Brody’s Vegetable Curry

1 lb. eggplant, peeled and cut in to 1 inch cubes
1/2 tsp. salt
1 T plus 2 tsp. oil, divided
2 T curry powder (Mom uses curry paste)
1 tsp. cumin
2 large cloves garlic, minced
black pepper to taste
salt
1/2 c chicken or vegetable broth (I use more like 1 cup)
2 med. carrots, thinly sliced
2 cups diced potatoes (2 medium)
1 bell pepper, large chop
2 large onions, large chop
2 c bite-sized cauliflower flowerets
1 med. zucchini, large chop
1 can diced tomatoes with liquid
1 16 oz. can chickpeas, drained
1/4 c raisins

1. Salt and drain cubed eggplant for 30 minutes.

2. Heat 1 T oil in Dutch oven. Add eggplant, cook, stirring, about 5 minutes. Remove eggplant from pan and set aside.

3. Heat 2 tsp. oil in same pan, add curry, cumin, garlic, pepper, salt and broth and cook 2 minutes.

4. Add carrots, potatoes, bell pepper, onions, and cauliflower. Cover, simmer 5-7 minutes til tender-crisp. Return eggplant to pan, add zucchini, tomatoes, chickpeas and raisins. Cover and simmer at least 10 minutes. I cook it much longer, as I use more broth.

5. Serve with a dollop of Jane Brody’s yogurt-cucumber sauce:

Yogurt Cucumber Sauce

1 c plain low-fat yogurt
1 cup peeled, seeded, diced cucumber
1 tsp minced garlic
2 T fresh dill or 2 tsp. dried dillweed
1 T olive oil
2 tsp. white vinegar
Salt

Combine all ingredients. Chill.
