View Full Version : Need non sweet & savory salad

There are many great salad recipes but almost all of them have sugar, in the ingredients or the dressing. Maybe someone could give me a recipe for a savory salad... I plan to serve spinach & strawberry salad and chicken pineapple salad (that calls too for raisins), I would like a completely savory one now. Ideas?

what about a plain spring mix salad with lots of veggies, feta or blue cheese, garlic croutons and some kind of Italian dressing - maybe the Good Seasonings packet and instead of adding water for the dressing, add lemon juice - it's really good :)

This looks great layered in a big glass bowl.

Shaved Salad with Prosciutto Bits
Recipe courtesy Michael Chiarello

For the vinaigrette:
1/4 cup red wine vinegar
Pinch gray salt
2 tablespoons Dijon mustard
1 teaspoon dried oregano
Freshly ground black pepper
1 cup extra-virgin olive oil
1/2 cup crumbled blue cheese, optional

For the salad:
2 cups baby arugula
2 cups coarsely grated or thinly sliced fennel, about 2 small bulbs
Gray salt and freshly ground black pepper
1/2 cup freshly grated Parmesan
1/2 cup crisply fried Prosciutto Bits (or bacon)
2 cups coarsely grated green zucchini
2 cups coarsely grated or thinly sliced red cabbage
2 cups coarsely grated carrot

For the vinaigrette: In a small bowl, whisk together the vinegar and salt. The salt crystals should dissolve. Whisk in the mustard, oregano, and black pepper. Slowly whisk in the olive oil to form a smooth emulsion. Crumble in the blue cheese, if using. Pour the vinaigrette into a serving bowl to be passed at the table with a spoon. Refrigerate until ready to serve.

Set out 8 salad bowls, preferably clear glass so the guests can see the layers of vegetables. For each bowl, put down a layer of arugula and then a layer of fennel. Season with salt and pepper, to taste, and sprinkle 1 tablespoon Parmesan and 1 tablespoon Prosciutto Bits over the fennel. Next, put down a layer of zucchini and a layer of red cabbage. Once again, season with salt and pepper to taste and sprinkle with Parmesan and Prosciutto Bits. Put down a layer of carrots over the top and finish with a small sprinkling of Parmesan and Prosciutto Bits.

Serve the salads at room temperature. Pass the vinaigrette at the table. Allow guests to dress their own salads and mix up the layers.

I have some nice salad recipes but I'm not sure I understand what you're looking for (I've never seen sugar in a salad recipe); are you looking for a composed green salad, or other types of vegetable, or something in the couscous/orzo family?

for your answers. Yes, there are many recipes of salads that call for sugar (or honey) in the dressing. Some others call for fruits, like the one I mentioned, pineapple with chicken. I would like to serve a salad that has vegetabñes and savory ingredients.

Andalusian Rice Salad -

1 cup converted rice
1 tsp. salt

Bring 2 cups of water to a boil. Add salt and rice; cover and cook slowly 20 minutes or until rice is just tender.

8 Tbsp. olive oil
3 Tbsp. wine vinegar
1 large clove garlic, minced
1 small onion, minced
Salt and pepper

While the rice is cooking, make vinaigrette sauce by combining the olive oil, vinegar, garlic, and onion. Season to taste with salt and pepper.

1 4-oz. jar whole pimentos, or roasted red peppers
2 Tbsp. chopped parsley

Drain the pimentos. Cut 6 narrow strips and set them aside. Finely chop the remaining pimentos. Cool the rice slightly. Add the vinaigrette sauce, chopped pimento and parsley. Toss gently.

Green and black olives for garnish

Spoon rice into serving bowl. When cool, cover and chill thoroughly. Decorate the top with the reserved pimento strips and olives.

Tortellini Salad -

16 ounces cheese-filled tortellini
1 green bell pepper, thinly sliced
1 red bell pepper, julienned
1 small red onion, julienned
1/2 cup sliced black olives
1/2 cup crumbled feta cheese
1/4 cup olive oil
2 teaspoons lemon zest
1/4 cup lemon juice
4 tablespoons ground walnuts, toasted


Cook pasta until al dente, drain and cool under cold water. Refrigerate until chilled. Whisk olive oil, lemon zest, lemon juice and walnuts. Combine pasta, peppers, red onion and olives. Add lemon dressing and feta cheese, toss.

My cousin made this recipe for a family potluck we had on Monday. It is AWESOME!

Curried Rice Salad

Salad

1/2 cup brown rice
1/2 cup wild rice
1 cup unsalted roasted cashews
1 can (16 oz) chick peas
2 1/2 cups chicken broth
1/2 cup sliced green onions

Cook rice in chicken broth. Tip rice into serving bowl to speed cooling. Add remaining ingredients. Tip - Add cashews just before serving so they don't get soggy.

Curry Cream Dressing

2/3 cup mayonnaise
1 tbsp yellow prepared mustard
1 tbsp cider vinegar
Dash of ground red pepper to taste
1 tbsp curry powder
1 tbsp honey
1 tsp worchestershire sauce

Mix dressing and toss into salad.
