Need eggless brunch ideas

I'm looking for brunch ideas to serve to an adult granddaughter and her two friends, one of whom is allergic to eggs. They will be visiting next weekend. I'm counting on help from you wonderful cooks.

Wow! Brunch with no egg casseroles or baked goods? That's hard, but not impossible!

What about bagels with smoked salmon, capers, etc.? You can also serve assorted flavored cream cheeses.

Fresh fruit sounds safe!

Croissants or homemade biscuits with ham or some sort of sausage gravy?

A hashbrown casserole or homefried potatoes could also work in there somewhere.

Karen, there are alot of possibiities for this. Don't stress.
As Lindrusso suggested, fresh fruit is always good, as a platter or fruit salad.

Casseroles based on grits (or polenta) instead of eggs.

Stuffed strawberries, pineapple-cheese casserole

GRILLADES
1 C. chopped onion
3/4 c. chopped celery
1-1/2 c. chopped green bell pepper
2 cloves garlic, minced
2 T. butter
8 veal cutlets
1/2 c. flour
1 c. water
1 c. red wine (optional)
2 c. chopped tomotoes
2/3 t. dried thyme
1 t. salt
1/2 t. pepper
1/2 t. Tabasco
2 T. Worcestershire
1 T. chopped parsley
2 bay leaves

Saute onions, celery, bell pepper and garlic in butter until light brown. Brown cutlets in 1/4 cup bacon drippings. Remove cutlets and keep warm. Add remaining drippings to skillet. Stir in flour. Add sauteed vegetables, and water through remaining ingredients. Mix well. Return cutlets to skillet. Cook over low heat for 1 hour or until veal is cooked through. Discard bay leaves.

Another idea if making a late brunch is make ham, one of the eggless coffee cakes, salad be it potato, green salad, or a fruit salad with a yogurt dressing. Have some mimosas and sit back and enjoy....
