I am making the maple soy glazed Salmon tonight
It calls for "only" 1 tsp of adobo sauce from canned chipolte chilis
I hate to open a whole can for one tsp.. do you have any suggestions
Thanks

You know, most recipes only use that much out of the whole can. Sure, some use one adobo pepper and 2 teaspoons, but still! I don't think I have ever even finished a can. But on the bright side, you can easily freeze the rest in more manageable portions. What I do is use what I need, then dump the whole thing in a blender and puree it, and I just refrigerate it. It lasts a long time. :)

If you have some leftover chicken, or even turkey or pork, you can mix some of the adobo sauce with it to make a spicy chicken salad. You can mix some into soup to give it a kick, or try mixing a bit with mayonaise for a sandwich spread.

Just open it and put the rest in a tupperware container. It's definitely worth it! One little teaspoon of adobo sauce goes a long way and your chipotles, even though they've been opened, should last a long time in the refrigerator.
