View Full Version : dorothyntototoo: mini muffin cheesecakes?

The mini-muffin size cheesecakes -- Cooked 10 min at 375; but what am I looking for to tell they are done. They were rising in the middles and there was no movement if I shook the muffin tin. So I took them out and they are resting on the counter for an hour b/4 placing in the fridge. Have the (2) 6.5" in the oven now, but have experience with seeing "doneness" from baking pumpkin custard pies. Have the 6.5" at 300 for approx. 45 min; then testing for doneness. They "look" really pretty. Had to add green food coloring bec. that beautiful picture in B/A is not what I got in the real world.

Foodfly - the little cheesecakes "set up" in 10 minutes. They won't brown. After they chill overnight they'll be perfect! Isn't it a shame that food stylists "fake" the pictures so we think we've done something wrong when our dishes don't come out looking like the recipe picture? They should get coal in their stockings!

The mini-muffins look perfect. The 6.5" ones cracked and did not visually behave like a larger 9" would have so I had a hard time deciding when to take them out of the oven. May have overcooked them. Used one of those air insulated baking sheets underneath which may have raised the cooking temp. (Live and learn). Took 6.5"-ers out at 55 min and was totally guessing. Also didn't know how high up on the pan I should fill. I left it 1" from the top. My cheesecake technique needs more practice. The uncooked batter sure looked pretty before going into the oven. I was waiting until tomorrow to sneak a taste after they mellowed overnight.

Screwed up my first batch of Coconut Ice Cream base (it happened in a heartbeat); fortunately I had enough ingredients to make a second run. Just alittle glitch. Hopefully, I won't set the house on fire when I flambe the pineapple ;) , LOL.

Bah, Humbug!
