Lots of eggs!

I have about 9 eggs left over from the holidays. I was going to make an egg strata for Christmas morning, but was told not to as my sister really wanted to do breakfast...of course, I had already bought the eggs:)

Anyway, we're leaving tomorrow in the early AM to go to a wedding for 6 days, and I was wondering if there was anything I could make with that many eggs tht perhaps I could freeze or give to a family member?

Eggs keep for quite a long time, and will likely still be good when you get back!

Don't worry about hurrying to cook those eggs. When I went home for Xmas after my first semester at school in my own apartment, I took a dozen hard boiled eggs. I was afraid they'd go bad. My dad laughed & explained that eggs keep for quite a while, even past their expiration date. I've never worried about old eggs in the many years since & have never had any go bad. ;)
