ISO:Vegetarian Cookbook that includes some easy/quick recipes

I would like to buy one of my friends a cookbook for her birthday. She usually eats vegetarian meals (sometimes eats chicken). She is real busy so I am looking for a vegetarian cookbook that also includes some quick recipes, and not a ton of ingredients.

I just tried the Easy Layered Beans and Rice from the Meatless Gourmet (got the recipe from the BB) and I loved that recipe so I am thinking of that book but I don't know anything else about it.

I would suggest Moosewood Restaurant Cooks at Home - straightforward recipes that can usually be done within 30 minutes (the time required for each recipe is indicated) using basic ingredients.

If she's looking for quick and easy recipes, I highly recommend The Meatless Gourmet. Many of the recipes don't look like much, but I am continually surprised at how good the recipes are. Almost all of the recipes use things that you generally have on hand, as well.

Thanks so much for the ideas. I will definitely check them out. Hmmmm, maybe I'll buy myself a cookbook too. I don't have any vegetarian cookbooks.

The Meatless Gourmet seems to only be available used (from what I have seen so far). I loved the Easy Layered Bean recipes so I am going to check out that book at the library as well as the others. They all sound good....

I vote for this one too. The Garlicky Mushroom Quesadillas are delicious!
