View Full Version : Risotto reviews (including Emily's)

Well, Friday night I made the Risotto with Greens, Walnuts and Gorgonzola....DH pronounced it the best we had had so far....our friends were blown away. None of them had even heard of risotto and most didnt know about spanokopita (the "side dish") We also had the Lemon Sponge Cake with Strawberry Filling which was light and refreshing after a heavy meal (they couldnt believe how light it was) We cut it into 12 pieces instead of 8 and it was still plenty!

Tonight we had Risotto with Smoked Salmon, Asparagus and Shitakii Mushrooms. It is a recipe by Emily. Well Em, DH and I gave it a 9. I took a bit of creative license and added about 1 oz sheeps feta to it. We had it with an Italian dry white - Lacryma Christi Del Vesuvio 1997. It was topped off by the last 2 slices of lemon cake. All in all, a wonderful cooking weekend.
