Storing Tofu

Keep it in container just covered with water and change the water daily. It will only keep about a week, so plan to use it up soon.

I usually buy a 15 oz package of extra-firm tofu, but sometimes don't use the whole thing for one meal. Is there a way to keep the leftover tofu without it drying out/going bad? How long can I keep it?
