View Full Version : Anchovie Fillets in Olive oil

How long do you think an open jar would keep in the fridge? I need some tomorrow and have a jar that's a few months old-should I buy some new ones? I live in a smallish town and I'm not sure I'm going to find them here. I don't use them very often so it's almost a full jar. The jar label doesn't really say anything about how long they would keep.

This is not based on any actual science, but I can tell you that I almost always have some (previously tinned) anchovies in a small jar of olive oil in the 'fridge and they typically last me around three months -- they've been just fine. HTH
PS: Wondering if those packed in salt would a better choice for less frequent use? Or better yet, anchovy paste.

With cured, brined anchovies that have been sitting open for three months? Hmm, could be a pretty subtle smell difference between "great" and "not" :p
