A couple of months ago, Grace posted the recipe for Almond-Apricot Tart from Mollie Katzen's "Vegetable Heaven". I have been waiting patiently for apricots to make their appearance at the grocery store and this weekend I hit the jackpot.
This tart is amazing!! I can't make a crust to save my life, but I managed pretty well with this one and in the end my patchwork didn't matter- the crust was light, flaky, perfect. I don't have a tart pan so I used a pie dish, but now I may have to buy a pan just for tarts! It was all incredibly easy, elegant, delicious. It looked and tasted like a tart I could buy at a French patisserie. This recipe gets a 10+!
