This was dinner tonight, and it was great! My new favorite ingredient is anchovy paste. Now I have to find more recipes to use it in! I subbed red wine vinegar for the white, without any noticeable difference. I also made the whole salsa recipe, and ate it all myself with my fish.Yum....... :)

Broiled Tilapia with Tomato-Caper Salsa

The mild tilapia is a perfect foil for the bright, zesty salsa. Serve with couscous to keep cooking time to a minimum.

1 cup chopped tomato
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon capers, drained
1 tablespoon white wine vinegar
1/2 teaspoon anchovy paste
2 garlic cloves, minced
1 1/2 tablespoons extravirgin olive oil, divided
1/4 teaspoon salt, divided
1/4 teaspoon freshly ground black pepper, divided
4 (6-ounce) tilapia fillets
Cooking spray

Preheat broiler.

Combine the first 6 ingredients in a medium bowl, and stir in 1 1/2 teaspoons oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.

Brush fish with remaining 1 tablespoon oil; sprinkle with remaining 1/8 teaspoon salt and remaining 1/8 teaspoon pepper. Arrange fish in a single layer on a jelly-roll pan coated with cooking spray. Broil 4 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness. Serve with salsa.


Yield: 4 servings (serving size: 1 fish fillet and 1/4 cup salsa)

Thanks for the review. I don't usually make things with capers, but maybe I will try this.

I made this tonight. The salsa is SO good! How can you go wrong with garlic, capers, and anchovy paste? Two of us are the whole salsa recipe (I think I ate 3/4 and let my DH have the rest). Will definitely make again.

Glad you enjoyed it. I will have to try this again, as I have absolutely no recollection of either cooking or posting this recipe!:eek:

Thanks for bringing up this old thread. I'm going to try this. I have some costco tilapia in the freezer waiting to be used.

Yes,,the salsa is out of this world. Anchovy paste and capers are a great combo that give it a unique high-end developed flavor. Amazingly easy and quick. I was apprehensive about broiling the fish...just a nervous fish "cooker"..but the tiny bit of olive oil brush on the fillet made the high points on the fillet brown and crisp...and the heart of the meat flaked perfectly and was oh so tender.....served a bed of rice with fillet and salsa...husband thought we should take a picture. REPEATER HERE!!!!

This is why I love this board!

I'm sure when I first saw this recipe in CL, I passed it over immediately with a "capers, anchovies, BLECH!" thought in my mind. But, after reading the posts on here that made it sound so good, I decided to give it a try even though I've never cared much for capers OR anchovies. I've never even tried anchovy paste but assumed I would like it either.

Boy, was I wrong! This dish was simple but so delicious. I used basil instead of parsley and broiled the fish with the salsa on it. I served it with the orzo as suggested and also some steamed green beans.

So thanks for encouraging me to try something I didn't think I'd like. This will definitely be a repeater for me - wow! :D
