I love, love, love oatmeal. I am always trying to make it interesting whether its mashing a banana or swirling peanut butter in it. I've found gold when I made the Baked version from the BB. Now I'm stumped. What else can I do with it? I eat it almost every other day and need inspiration. TIA!

Because of the fresh pineapple, I'd say no on the version posted in the other thread, but you can certainly try Alton Brown's, which I like well enough, and which uses dried fruits, which I cut back on substantially and use whatever I have around. I've also substitute 2% or even 1% for the half & half. If you're one of those who'll use FF half & half (read: corn syrup), that would certainly work, too.

1 cup dried cranberries
1 cup dried figs
4 cups water
1/2 cup half-and-half
In a slow cooker, combine all ingredients and set to low heat. Cover and let cook for 8 to 9 hours.
Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.

I make the steel cut oats according to the box directions including soaking overnight. I do not cook them on the stove after soaking. I then ladel into little screwtop Ziploc bowls (I love them!) and store in fridge until ready to take to work. At work, I microwave the small portion for several minutes, then add skim milk and brown sugar. Easy... cheap. nutritious. convenient.
Nothin' fancy here, but I made real oatmeal portable and still full of nutrition and fibery goodness (unlike the instant varieties).

Healthy Coconut Oatmeal
All Recipes
Yields: 4 servings
"A fast and healthy breakfast cereal or high-energy snack. Oatmeal made with coconut, raisins, cranberries, walnuts. Brown rice can be used in place of oatmeal."
INGREDIENTS:
3 1/2 cups plain or vanilla soy
milk
1/4 teaspoon salt
2 cups rolled oats
1/4 cup pure maple syrup
1/3 cup raisins 1/3 cup dried cranberries
1/3 cup sweetened flaked
coconut
1/3 cup chopped walnuts
1 (8 ounce) container plain
yogurt (optional)
3 tablespoons honey (optional)
DIRECTIONS:
1. Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.

3 1/2 cups skim milk
2 cups old-fashioned oats
1 tablespoon butter
1/8 teaspoon salt
1/4 cup maple syrup
1/2 cup raisins
1/2 cup chopped walnuts
1 cup chopped, unpeeled apple
1. Bring milk to a low boil; stir in oats. Add butter and salt and cook for about 5 minutes over medium heat, stirring occasionally.
2. Remove from heat and add maple syrup, raisins, walnuts, and apple. Mix well. Serve in individual bowls with warm milk and a tablespoon of maple syrup or brown sugar on top.
Yield: 4-6 servings

Oatmeal Creme Brulee

Amount Measure Ingredient -- Preparation Method

2 cups quick oats -- or 2 1/4 cups old-fashioned oats, uncooked
1/3 cup granulated sugar
1/4 teaspoon salt (optional)
3 1/3 cups nonfat milk [soymilk works well -- too]
2 eggs -- or 1/3 cup egg substitute, lightly beaten
2 teaspoons vanilla 1/3 cup firmly packed brown sugar
Heat oven to 350 degrees. Spray 8-inch-square glass baking dish with cooking spray.
In large bowl, combine oats, granulated sugar and salt.
In medium bowl, combine milk, eggs and vanilla; mix well. Add to oat mixture; mix well. Pour into baking dish. Bake 40 to 45 minutes or until center jiggles slightly. Removed from oven to cooling rack.
Sprinkle brown sugar evenly over top of oatmeal. Using back of spoon, gently spread sugar into a thin layer across entire surface of oatmeal. Return to oven; bake just until sugar melts, about 2 to 3 minutes. Set oven to broil. Broil 3 inches from heat until sugar bubbles and browns slightly, 1 to 2 minutes. (Watch carefully to prevent burning. It may be necessary to turn baking dish.) Spoon into bowls to serve.

2. Stir toasted oats into the simmering liquid, reduce leat to medium-low; simmer gently, until mixture thickens and resenbles gravy, about 20 minutes. Add salt and stir lightly with spoon handle. Continue simmering, stirring occasionally with wooden spoon hand, until oats absorb almost all liquid and oatmeal is thick and creamy with a pudding-like consistency, about 7 to 10 minutes. Off heat, let oatmeal stand uncovered 5 mintues. Serve immediately. (I often need to add extra liquid at high altitude.) Serves 4

Pat, while the familiar green-and-white box or tin of McCanns is what's found in most stores that stock steel cut oatmeal, it's pretty expensive, and buying in health food stores generally means fresher and a lot cheaper.

What about crockpot oatmeal? I like the idea of waking up and its ready.
Ideally, I'd like to have it cooked so I can put it in a dish to take to work and reheat in the micro later,(I don't like to eat at 7am), and eat the rest of it during the week.......

I found steel cut oats at our most upscale grocery (that would be Hen House for me. By upscale I mean they sell Boars Head at the deli counter, and the meat ranges Prime to Choice vs. our Hy-Vee that ranges Choice to Select.) There’s a brand that I think is <Something> & Sons. I believe it is a white can with black and gold writing and design on it. They wanted something like 7 bucks for that sucker. I then found some in the special flour mixes, what are those called, Red Mill or Hodges Mill or something like that. Way more reasonable.
Cooking Light has a Slow Cooker Cookbook that has apple and hazelnut oatmeal in the crock-pot. I picked them up for this recipe, and really like it. This was my first attempt at steel-cut oats. Maybe it is just me, but I didn’t find steel-cut way different then any other oatmeal. There are these little pearl like beads of oats that burst when you bite them, with is a texture you don’t get in quick oats, but otherwise it’s creamy and oatmeal tasting. As far as refinement and that part goes, I am guessing you get more fiber and calorie burning from turning the steel cut oats to full than the quick, so it does have that edge I’d guess.
Here’s my question to add. I also put mine in ziplock bowls to take to work, I just did it after it was cooked. When I open the bowls they have sort of a skin, it’s not really rubbery, but that’s the best I can describe it. Is this from the oats, or would the 2 Gala apples have enough pectin to have done this?

I've posted this before, but it bears reposting-- besides, I love it. I've made it with 4 different kinds of peach juices so far, and surprisingly, the juice I like best in it is Libby's Juicy Juice peach blend. Also tried it with trader joe's Dixie Peach, After the Fall's peach harvest, and Dole's Orange/Peach/Mango. The dole and TJ's are most cost-effective, since you can make it twice with each, but all are good. this recipe is from Moosewood's New Classics, copyright 2001.
PEACH OATS BRULEE
4 C unsweetened peach juice
2 C rolled oats (not instant or quick-cooking!)
1/2 tsp salt *
2 Tbsp butter
1/3 -1/2 c brown sugar
Preheat oven to 350 degrees F.
Pour juice into a saucepan, cover & bring to boil on high heat. Stir in oats & salt & return to a boil, stirring constantly for about a minute.
Transfer the oat mixture to a lightly greased ovenproof 2-quart casserole dish that's about 9x6 inches. Cover & bake for 25 minutes, until liquid is absorbed and oats are tender.* Remove from oven, dot with butter, sprinkle brown sugar evenly over and broil about 3-6 inches from heat for 2-3 minutes, until melted & bubbly. Serve hot.*
*Mari's notes-- 1) I never use the salt, it tastes great with out it. 2) After cooking for 25 minutes, it may look like the oats haven't absorbed and cooked-- stir a bit, and you'll likely see they are. 3) No milk is needed, and with some juice blends you run the risk of curdling-- but with citrus free blends, we find a bit of half-n-half is nice over the oats. it doesn't really need anything but a spoon, though! 4) Apple or Apple-raspberry juice, apple-apricot, and 1/2 apple, 1/2 pear are all recommended by the authors-- I haven't tried those yet. I do recommend canned peaches or apricots as a topping occasionally. Haven't gotten to try fresh as was past the season when I got the book.

For those of you who cook it overnight in the crockpot, what time can you put it on the night before? Does it really have to be 8-9 hours on low, or can it go from maybe 10 pm to around 8:30 am?

Oatmeal isn't always for breakfast. This is a dinner sidedish recipe I copied from the Washington Post, more than 15 years ago:
Golden Oatmeal - Serves 4
1 1/2 cup oatmeal
1 egg, beaten
3 tablespoons butter
3/4 cup water, or broth, of choice
1/4 teaspoon salt
Combine oatmeal and egg. Add to butter in a 10" skillet. Cook over medium-high heat, stirring constantly, 3-5 minutes. (Until dry, separated and slightly browned). Add broth, or water, and salt. Cook, stirring constantly, until liquid evaporates.
[Their suggested variations: Add herbs, of choice; 1/2-1 cup mushrooms; Zucchini; Green, or minced onion; Peppers, chopped; Spinach; Broccoli; Tomatoes.]
I have always made it either plain, or with mushrooms.
I have a similar recipe for Kasha from the same article.

This is another good one. I have a pan of it cooling on the counter right now. After searing them in butter, the oatmeal triangles are buttery and crisp on the outside and creamy on the inside. I think I might have cut back on the butter a little bit, but I think using butter is necessary when browning them in the pan. The brand of my steel cut oats is Bob's Red Mill, btw.

Pan-Seared Oatmeal with Warm Fruit Compote and Cider Syrup

1/2 teaspoon ground cinnamon

1/4 cup butter, divided
To prepare syrup, briing cider to a boil in a small saucepan over
medium-high heat. Cook until reduced to 1/3 cup (about 20 minutes); set
aside.
To prepare compote, combine 2 cups water, 1/4 cup sugar, 1/2 teaspoons
cinnamon, and dried fruit in a maedium saucepan; bring to a boil. Reduce
heat, and simmer 20 minutes or until thick.
To prepare oatmeal, combine 3 cups water, 1 cup milk, 1/4 cup brown sugar,
1/2 teaspoon cinnamon, and salt in a large saucepan. Bring to a boil over
medium-high heat; stir in oats. Reduce heat and simmer 20 minutes or
until thick, stirring occasionally. Spoon oatmeal into an 11 x 7-inch
baking dish coated with cooking spray; cool to room temperature. Cover
and chill at least 1 hour or until set.
Using a sharp knife, cut oatmeal into 8 equal rectangles; cut each
rectangle in half diagonally to form 16 triangles.
Melt 2 tablespoons butter in a large nonstick skillet over medium heat.
Add 8 oatmeal triangles; cook 3 minutes on each side or until golden
brown. Remove from pan; keep warm. Repeat procedure with remaining2
tablespoons butter and oatmeal triangles. Place 2 oatmeal triangles on
each of 8 plates, and top each serving with 3 1/2 tablespoons fruit
compote and about 2 teaspoon syrup.

NOTES : To the oatmeal mixture I added extra cinnamon, fresh nutmeg, and added vanilla towards the end. I didn't make the syrup or compote. In the same skillet (after I browned the oatmeal), I sauteed a sliced banana with cinnamon and fresh nutmeg and brown sugar, then I splashed in some apple juice and vanilla. I served this over the oatmeal. Yum! I think I might try the same thing with an apple tomorrow. This was the first time I'd ever tried Irish oats.

Another Oats question...(I looked this up in my "Food Lover's companion" but it wasn't there.)
What are Pin Head Oats? I brought some home from Ireland (Foodie souvenir :D) and haven't used them yet. It looks as though they might be very similar to Steel-cut or Scotch oats.
Anyone?

This thread is timely for me, since I just found out that what I thought was a cold bug is really mono :( , and about the only thing I feel like eating these days is oatmeal. I've had the pineapple version Bob posted (on its own thread) the last three days for dinner. I'm looking forward to trying the other recipes posted here.
Not recipes, but some flavor combos I like with my oatmeal are peanut butter with dried or fresh apples, pomegranate seeds with a dollop of cottage cheese or yogurt, and dried or fresh blueberries with toasted hazelnuts. CL's Cherry-Hazelnut Oatmeal is also excellent.

That's too bad yours didn't turn out well because I thought it was so good! :( Mine came out like a moist snack cake with chewy oats in it. Not dry at all, but also not as "oatmeal-ish" as the popular Baked Oatmeal recipe that has been mentioned a lot on the BB.

Sonja, let me know how yours turned out. Pilgrim, I was thinking maybe I should have put a little extra milk in it other then one cup? I think my problem was the mixture wasn't wet enough.

Yesterday's feature in our local paper's food section was on oats. Personalky I think the headline was less-than-appetizing (Mmmm, oral fiber was the headline), but these (http://www.kentucky.com/mld/kentucky/living/food/13589223.htm) recipes looked pretty good to me.
I thought the "Oatmeal Five ways" part at the bottom might be particularly useful for you.

Patissac, just got the oats out of the oven. Still a little chewy...but good. Not "knock your socks off" good, just good. I think I'll try the crockpot method next. The flavor is good. Also not "knock your socks off" but I'm going for more. I'll try the other method overnight and let you know tomorrow.

I made a half batch of this on Sat. morning and it was yummy! I got 3 servings out of the half batch.
I used regular 1% milk instead of soy and added vanilla; used golden raisins instead of dark; and skipped the yogurt and honey. Will definitely repeat. Can't wait to try some of these other recipes!
I love this recipe. It taste just like an oatmeal coconut cookie.
Healthy Coconut Oatmeal
3 1/2 cups plain or vanilla soy
milk
1/4 teaspoon salt
2 cups rolled oats
1/4 cup pure maple syrup
1/3 cup raisins
1/3 cup dried cranberries
1/3 cup sweetened flaked coconut
1/3 cup chopped walnuts
1 (8 ounce) container plain yogurt (optional)
3 tablespoons honey (optional)
DIRECTIONS:
1. Pour the milk and salt into a saucepan, and bring to a boil. Stir in the oats, maple syrup, raisins, and cranberries. Return to a boil, then reduce heat to medium. Cook for 5 minutes. Stir in walnuts and coconut, and let stand until it reaches your desired thickness. Spoon into serving bowls, and top with yogurt and honey, if desired.

Oh, I wanted to add that I scorched the first batch of milk. :rolleyes: So I dumped it and started again and it started turning brown on the bottom of the pan, too. :mad: I was able to salvage it the second time though and poured it into another saucepan. How do you boil milk w/o scorching it? I think I might microwave it next time or heat it on low instead of medium.

I usually never boil my milk for oatmeal. I add the oatmeal when the milk is simmering and just take it off when it is thick enough for me. Also I stir it constantly so it doesn't burn.
I love to add frozen blueberries to my oatmeal, but always end up with very blue oatmeal. If you add blueberries to your oatmeal, how/when do you add them?

Yes, they are the same as steel-cut or Scotch oats.

But are steel-cut and Scotch oats the same thing? Bob's Red Mill sells them as two different things. They were right next to each other at the store the other day and they definitely looked like two different type of oats. I bought the steel-cut because they were on sale and thought they were the ones I typically see called for in recipes. :confused:

I tried making steelcut oats in a crockpot recently; it was delicious but cleaning the caked-on oatmeal off the pot afterwards was enough to make me decide not to try it again. What do people do to avoid that problem?

Try soaking your insert for 10 min or so - it should wipe right out.

You can buy disposable crock pot liners...they are sold near the aluminum foil and plastic wrap-they work great! Not the most eco-friendly but they do work well and IMHO are worth using at times!

I had the same problem with the slow cooker and switched to the traditional pot, 5 minute cook, let soak overnight, reheat in the morning method.

That's exactly how I do it and it works great. I just had some this morning with some raisins and brown sugar. YUMMY and filling. I toasted mine first this time (350 degrees on a cookie sheet for 20-30 min.), then put it in a pot with water (1 c. oats to 4 c. water). As soon as it reaches a boil, cut the heat, cover and let it sit overnight. In the morning just reheat and eat.

I like to dry fry my oats in a cast iron skillet - sometimes with chopped nuts. When the oats are lightly browned and fragrant I dump in water, cover skillet, put on low heat, and wait about 5 minutes. This seems to keep the oats from getting soggy. When they are cooked I add frozen berries and I'm good to go for breakfast - the berries and milk cool the oats to just the right temperature.

So many great ideas here...love it! In addition to baked oatmeal, which we make a lot (using either dried blueberries/applesauce/walnuts or mini chocolate chips/bananas/walnuts), we love these pancakes and make them at least weekly.
OATMEAL PANCAKES
2 cups rolled oats
2 cups buttermilk
2 eggs
1/4 cup oil
vanilla (about 1-2 tsp. probably)
1/2 cup flour (whole wheat pastry flour)
2 Tbsp. sugar
1 tsp. EACH baking powder, baking soda
1/2 tsp. cinnamon (we use more but don't measure - prob. 1 tsp)
1/4 tsp. salt
Soak oats in buttermilk overnight in fridge. In the morning, add eggs, oil and vanilla to oat mixture, then stir in combined dry ingredients. Recipe says you can add blueberries (yummy) or shredded apple, which we haven't tried. From Simply In Season cookbook.

i swath mine in butter or use a cooking spray first.
my new fave way is to use the cheap, quick-cooking (all they have) steel-cut oats from Aldi's-- i find these need higher ratio of oats-to-water than the given directions, so i add a little Cream of Wheat cereal, vanilla, chopped dates and then, in the morning, a dash of wheat bran stirred in if all is still too watery. it's so good, especially with almond milk and sliced banana.

Steel-Cut Oat Pilaf
1 cup steel-cut oatmeal
1 tablespoon olive oil
6 green onions, thinly sliced
2 cups chicken broth
1 cup frozen petite peas, thawed
1 teaspoon lemon zest
2 tablespoons Italian parsley, chopped
1 tablespoon chives, chopped
1/4 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup Parmesan cheese
1. Preheat oven to 400º..
2. Toast oats in oven 5 minutes, set aside.
3. Heat olive oil in a large pan over medium heat, add the green onion, sauté for about three minutes. Remove onion from pan, sset aside.
4. Turn heat to high, add oatmeal, and toast 1 minute. Add broth, bring to a boil. Reduce heat to low, cover and simmer, 20-25 minutes, until broth is absorbed and oats are tender.
5. Stir in peas, cover and cook 2 minutes. Add the lemon zest, parsley, chives, cooked green onions, parmesan cheese, salt and pepper.Stir to combine
Serves 6 (1/2 cup servings).
