Thanks for all the ideas contributed. Since we will be having guest prior to our trip and it is VERY hot now I decided to do things when I get there. So I will make pico de gallo Deanna's 3 bean recipe plus graces coleslaw since it can easily be assembled.
I considered baking Thursday but by saturday with the heat things might not hold as well, plus I am baking twice this week already for tomorrow's 4th party and for a dinner Wednesday..... Thanks for all the ideas.
