Hey everyone!
This weekend I had what I consider a pretty good cooking weekend.
Saturday I made the Thai Noodle Salad that someone (Emily?) posted from Moosewood Daily. YUMMMMM!!!! It is soooo good. I also made the Ginger Peanut Wraps. Hubby loved the wraps and wasn't crazy about the salad...YEE HAA MORE FOR ME!!! I'm not usually like that but heck, he loved the wraps so I get to be greedy once in awhile ;0
For dessert later that night, I made Lemon Cream Tart which is a definate keeper. Very easy and tasty. I cheated and used a reduced fat graham cracker crust and it was delicious.
Sunday evening, I made the notorious BBQ chicken Pot Pie which I had never made before. YUMM!!!! This is also a keeper ....hubby asked me if he was going to have to wait 6 months to have this again http://www.cookinglight.com/bbs/biggrin.gif Needless to say he loved it.
I also wanted to share this dessert that I got from the old Weight Watchers site (before they started charging for recipes http://www.cookinglight.com/bbs/biggrin.gif ) It is easy, simple and tasty for low points. I know there are a few WW'ers here so enjoy! I am doing this from the top of my head so if anyone wants nutritional info, I can provide that tonight or tomorrow. It's 3 pts a serving and pretty good size serving http://www.cookinglight.com/bbs/smile.gif
Chilled French Dessert
27 Cinnamin Graham Cracker Squares (I use Honey Maid low fat)
2 1/2 cups of chunky apple sauce
6 oz of lowfat vanilla yogurt (I use Stonyfield nonfat french vanilla)
8 oz lite cool whip
Cinnamin to taste
Line bottom of a square pan with 9 graham cracker squares. In a bowl, mix applesauce with yogurt. Spread half the mixture over the graham crackers. Repeat layer ending with last 9 graham cracker squares. Top with cool whip and sprinkle with cinnamin. Chill for two hours and cut into 8 servings.
