Just curious. I have some henkels. Some I like better than others. I really don't care for the pairing knife. I much prefer my
Chicago cutlery one.

Oh goodness, I must admit that I have used some of the best knives on the planet. And I always come back to mine, some of the cheapest knives on the planet. The ones I have from school are "F.Dick", and although I love my bread slicer and ham slicer I HATE the Chef's knife. It just never held an edge, and the blade isn't balanced to my arm, so I never liked it!!

I have used Henkels and I do love them! I only have a Henkels paring knife, and it's my favorite.

As for my personal Chef's knife, do I have to admit this!!?? Before this year I used one that I bought at Woolworth's before I was married, and LONG before I knew better. I have held up every knife to it, and it always won the tests!! Does the knife glide through a tomato, how about carrots, potatoes and especially my beloved onions!? Until this year I haven't had a knife that did this like that $5 cheapie thing!!

But, this past Christmas I was visiting family and I used a Farberware Chef's knife. I then went out to buy my own because it PASSED all of my tests, and boy was I shocked at the price!! Only $13 at the local Bed, Bath and Beyond. I bought one, and I'll be back this summer when I buy one for my son (learning knife skills).

So, when buying knifes, play with your friends and family and buy what is comfortable for YOU, no matter the price. I would have thought that only pricy knifes were good knifes, but that just isn't true. The best knife is the one that you reach for because it does it's job and it's comfortable in YOUR hand.

I LOVE my henckels, but they have to be sharp. I think my biggest kitchen pet peeve is dull knives (YUCK!).

That said, I have a Kershaw Chef's knife (by the makers of snap-on tools) which I adore. It has a rubber handle, and fells really good (weight wise).

I also just ordered a "Ming Tsai" ceramic knife as a present for my DH (just because, no occasion), so I'll report back on that http://www.cookinglight.com/bbs/smile.gif

I spent a whole lot 'o money on a set of Henkels, so I BETTER say Henkel, but I also like the feel of the Wusthof-Trident in my hand. I like a lot of weight in my knives! Of course, I'm also the one who plays pool with the 21 ounce cue, so there you go! http://www.cookinglight.com/bbs/biggrin.gif

I have Cutco knives, which cut nicely and have very comfortable handles. They feel really balanced when you cut with them, too. I haven't compared them to other good knives like Wusthof or Sabatier, but these are SOOOO much better than the terrible knives I had before! They have a lifetime warranty too.

I have a few Henckels (4 star version, I think) and 2 Sabatier knives that are the best ever! The rest are no-names that serve whatever purpose until I can complete a collection of good knives.

I also agree that sharp knives are most important... we didn't like using the sharpening steel (seemed like we did it wrong) so, we bought one of those electric sharpeners that has the 3 different things you slide it through... it's the best!

I was given a gift of three Wilkinsons and, having removed the tip of my finger, they are the SHARPEST knives I have ever laid my hands on. I just wish I could find a place to get more! All I ever find are the swords these guys make. I have had them for about 5 years and they still beat every knife I have ever touched...

I have Cutco too and I LOVE them. My then boyfriend (now husband) used to sell them and he was pretty good at it, so our set was very inexpensive. When we were dating, I used to joke that if we ever split up "I get the knives!"
