View Full Version : ISO: Moist and Tasty Oat Bran Muffins

I am desparately searching for a recipe for oat bran muffins that stay moist and taste good (looking yummy would be a bonus)! My dh has to work on lowering his cholesterol and I have been through a couple of recipes that just weren't too thrilling - I wouldn't eat them because they were "ugly". I had tried a mix, but turns out it was wheat bran and that's not what he needs.

One of those high-fiber cereals has a wonderful recipe for muffins using their cereal. The recipe is right on the box. I think it's Fiber One - at any rate it's one of those that is shaped like short thin sticks. The muffins are really good even tho' I don't like to eat the cereal (too mushy).
Just re-read your post, I'm not sure what kind of bran they are.

Also, my FIL swears that using canned pineapple in his oat bran muffins helps make them moist. I think he just uses a regular oat bran muffin recipe and adds drained canned pineapple.

I have an awesome recipe for Sweet Potato-Apple-Oat Bran Muffins. They are really moist and very yummy! I will get it posted asap.

Sorry this took me so long!
Sweet Potato-Apple Muffins
1 1/2 cups oat bran
1 1/2 cups whole wheat flour
1 1/3 cups sugar
3 t cinnamon
2 t baking powder
2 t baking soda
1/4 t salt
1-2 Granny Smith apples, peeled and diced
2 cups mashed sweet potatoes (I use 1 can
vacuum packed)
4 eggs
1/4 cup canola oil
3/4 cup plain nonfat yogurt
Mix dry ingredients in one bowl, wet in another (without the apples). Add wet mixture to dry, and stir until just moistened. Stir in apples. Bake in muffin tins at 350 F for about 25 minutes.
I think this makes about 18. They freeze well. These muffins are REALLY yummy, but they may not pass the pretty test http://www.cookinglight.com/bbs/eek.gif . They are very moist, too. And as you can see, there is a lot of good stuff in them!
