Hi. We just bought a little waffle maker and I was wondering if it's okay to freeze waffle batter? Also, if anyone has any good waffle recipes, please post them. Thanks!!

I don't believe you can freeze the batter, as waffles are classified as a "quick" bread, which means the leavening agent acts quickly as soon as it is mixed with moist ingredients. If it isn't baked soon, the leavening agent fizzles out. I have often frozen the waffles after they are cooked - I reheat them in the micowave until thawed, and then pop them in the toaster to crisp them up.

I would also freeze the waffles instead. I think the batter can be stored in the fridge for a few days, but not sure if it can much longer.

Waffle batter can be frozen for about a week, but I wouldn't recommend it. You can keep cooked waffles frozen for a month or two. I think they're as good as freshly made when microwaved. (I never use the toaster; my mouth can't handle the crispness.) I have also kept batter refrigerated for a day or two. Even if batter could be frozen, it would seem inconvenient to me to store and dethaw a messy liquidy batter.
