Well, i didn't use canned <eek> beets. What I did was combine all the ingredients and then pour it over FRESH sliced beets and baked for 35 min. They were realllllly good. Next time I will omit the cornstarch, tho. Made it a little gooey. I will do this again.
We used the Hoffer brand creamy horseradish. I'm not sure if using a horseradish that wasn't "creamy" would matter but they were delish!

I don't know how I missed this review - I was thinking about this recipe ever since I first saw it. I got a WHOLE BUNCH of fresh beets today, and was wondering what to do with them, so I did a search and found this thread. Thanks for the review, and I will follow your advice and skip the cornstarch! It sounds easy and a perfect way to use up all those beets. I'll let you know how it comes out for me.

When I made them, I did use canned and I also used the cornstarch. We thought they were very good.

Well, I made these, using fresh, and I did end up using the cornstarch, just because the sauce was WAY too watery/runny without it. I liked this recipe very much, and I'll make them again when I have an abundance of beets! The horseradish was not overpowering, just added a nice flavor. I had to bake them a lot longer though because the beets were fresh/raw, and were still hard and cruncy after only 35 minutes. But it's a nice fall dish, for sure.
