Searched, but found nothing.

I had a package of mixed dried mushrooms and used some of those. DH and I discovered that we do NOT like dried chantrelles, had the consistency of bad calamari....I digress.

We both really liked the dish, just picked out the funky mushrooms. Takes a bit of time since you use the mushroom soaking liquid for the rice cooking. I'm slowly turning DH toward the good whole grains and found that he'll eat short grain brown rice vs. long. Don't ask me why.... :) He was quite impressed when I did the packing into a nice mold thing alongside his chicken breast and asparagus.

I'd do them again, but use a strictly dried porcinis, not a blend.

Thanks for the review, Susan. I'm thinking some Wild Mushroom and Rice Timbales accompanied with a good bottle of Oregon Pinot Noir... ;)

Glad to see a good review! I have this on the menu this week and am looking forward to it.

Susan, I'm the same way as your husband - I will eat short-grain brown rice, but I'm not a big fan of long. Not sure why, but something about the texture of short makes it more palatable to me (since I'm a reluctant brown rice convert anyway). :)

I finally made these last night. For starters, the amount of liquid the recipe calls for is waaaaaay too much. 2+ cups of liquid for 3/4 cup of rice?? If I had been paying more attention, I would have cut it back. After 50 minutes, my rice was soupy. I continued to cook it uncovered to try to get more of the liquid to evaporate, but it was still pretty runny. Of course, my molds didn't stick together at all, and I pretty much just ended up scooping spoonfuls of the stuff onto the plates instead.

I served this with the mustard-herb pork tenderloin that accompanied the recipe in the suggested menus at the back of the magazine, which was very good, and roasted green beans. I was disappointed that my timbales didn't hold together, but the recipe was still very tasty. I would make these again, but I would cut back significantly on the liquid.
