View Full Version : Novice risotto maker seeks good beginner recipe!

I have never attempted to make risotto and I think it's about time to give it a try. I know there are tons of risotto recipes out there but I am looking for one that is practically fool proof AND very tasty. Any suggestions and/or risotto making tips?

The best advice is to stir constantly! None of the recipes should be any more difficult or easier than another, it just takes patience in the stirring and not adding all the liquid at once (if you do it in batches it seems to be absorbed better-could just be my imagination, too http://www.cookinglight.com/bbs/wink.gif ).

Stirring constantly is the best advice and most important tip when making risotto. I'm finding that I am getting better and better each time I make it - there is a definite learning curve. One to try in the Feta and Vidalia Onion Risotto from CL. It was a back to the best sometime in 2000.

I'm placing another vote for the Vidalia Onion Risotto with Feta Cheese recipe!! This was my very first (and only) attempt at making risotto...about two weeks ago. The recipe said it would take about 20 minutes or so to incorporate all the broth. I timed it just to see......it was very very close to 20 minutes! This dish is awesome!!! Just keep stirring!!!!!

I can't wait to decide which risotto
recipe to make next!

The Gorgonzola Walnut and Greens Risotto is our favorite so far (we have also made the vidalia onion one, the bean and corn one and the salmon one)

I just msde the Sun Dried Tomato and Basil recipe from 9/96. It was really yummi.

I would make it again and if I can make it - you can!
