I am making scones for the first time. After doing some research, it seems that scones taste nicest straight from the oven. I just wonder if i can freeze some dough and bake two or three just for hubby and I. Thanks in advance for all your expert advices!

I like to just make the full batch, and then freeze any that are leftover. They thaw fast and if you reheat them in a 350 oven for a couple minutes it is just as fresh tasting!

I've never frozen unbaked scones, but I've frozen baked ones & rewarmed for a few seconds in the microwave. Not as good as freshly baked, but they were still flaky.

thanks Joe & Dorothy for the advice. I think I will just bake the whole batch and freeze the leftover :)

You can indeed freeze the dough. I have an old Martha Stewart Holiday Baking magazine with a recipe for Oat Scones with instructions to freeze the dough. After cutting the dough into triangles, freeze for at least 2 hours or up to 1 month. Then simply remove the triangles from the freezer, place on baking sheet, brush with cream & sprinkle with sugar (if you so desire) and bake. If you want the full recipe let me know and I will type it out for you.

Even if I'm going to serve them right away I freeze them for at least 20 minutes before baking. Yes, freeze them and take them out as you want them. It will take a few extra minutes to bake, 5ish, but it works very well.
If you have a vacuum sealer, all the better!

Oat Scones

2 1/2 cups oats -- regular or quick-cooking
2 cups all-purpose flour
1 1/4 cups whole wheat flour
3/4 cup granulated sugar
2 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup dried cherries -- roughly chopped
18 tablespoons unsalted butter -- chilled & cut into 1/2" pieces
2/3 cup buttermilk
1 tablespoon heavy cream
1 tablespoon turbinado sugar -- or other sanding sugar


Combine oats, flours, granulated sugar, baking powder, baking soda, salt and dried cherries in the bowl of an electric mixer fitted with the paddle attachment. Add butter and mix on medium-low speed until mixture resembles coarse meal. Add buttermilk and mix until just combined.

Turn out mixture onto a clean work surface and quickly pat into a 16 x 3-1/2" rectangle about 1-1/2" high. Using a sharp paring knife, cut the rectangle into 10 triangles. Wrap well in plastic; place in freezer at least 2 hours or up to 1 month.

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Remove dough from freezer and place triangles 2" apart on prepared baking sheet. Brush tops with heavy cream, and sprinkle with sanding sugar. Bake until lightly golden, about 30 minutes. Cool on wire rack.

The scones are heavenly! I followed a similar recipe from Martha Stewart's Baking Handbook though. It called for half of the ingredients in the recipe you shared and yielded 8 scones. It's Oat and Cranberries Scones! I baked 2 for teatime, and freeze the rest of the dough for weekend breakfast! :D
