Here's my menu for the week...looking forward to seeing what everyone else is having. Actually planning menus a week in advance was one of my new years resolutions, and this is the first week i've actually gotten around to doing it :o . Better late than never....

We actually planned some meals this week (we really need to continuously menu plan, but it tends to get forgotten.). No particular days, but we let the kids each pick something they wanted to have for dinner.
Hamburgers, Moomie Buns, oven fries, broccoli. (This was my daughter's choice)
Tuna Salad with crackers for lunch tomorrow
Avgolemono (Chicken Soup with egg and lemon) from Falling Cloudberries. The stock portion is cooking right now and I plan to make the soup tomorrow.
Hummus --Falling Cloudberries, made this tonight, it is very good.
Mac and Cheese --Barefoot Contessa
Chicken Nuggets (haven't ever made these before, need to find recipe, DS requested these)
NY strip steaks and Baked Potatoes (DH's request)
Swirled Dark/Light Rye bread --Bread Baker's Apprentice (DD requested this)

Boring week here in that most of it is going to be leftovers especially since DH won't be home for dinner at least 2 nights this week.
Tonight: OUT. DS#2 was at a friends all day and stayed for dinner, so DH, I, DS#1 and DD all went out for pizza. :D
Monday: Eggplant Parm. Lasagna(thawing), pesto bread, salad.
Tues. and Wed. -DH not home; leftovers for the kids and I. I have some veggie chili and bean soup in the fridge.
Thursday: Cornflake crusted Tilapia, Garlic bread pudding, sauteed, shredded brussel sprouts in browned butter, salad.
Friday: Roasted Eggplant-Artichoke ragout over homemade spinach fettuccine, pesto bread, salad.
Saturday: Homemade pizza night, salad
Misc:Made chocolate cherry cookies(CL 12/05) today and Almond horns(Odense website) today.

We made these cookies when Sweetpea (Amanda) was visiting a few weeks ago. We both loved them. We have visitors coming this weekend and thought they would like them. I can't wait to make them again!
I had never made the burgers. I couldn't find a post on them, but did notice they had good reviews on the recipe site. I saw Kristal's review. I really enjoyed them, so did DH! I never have good luck with burgers like this, they always fall apart or crumble. These didn't hold up as well as I would have liked, but they somewhat kept their "burger shape". They had a great flavor w/ the cilantro and chiptole mayo. I would recommend them!

Lunches: leftovers, or half a turkey sandwich and a cup of Gardennay soup
Baking: Request for banana muffins and probably chocolate chip cookies (my no processed food policy means I have a reason to do extra baking for lunchboxes)

Sure! Here you go:
White Bean & Tomato Casserole w/ Bread Crumb Topping
Serves 3-4 as a main course
1 1/2 c fresh bread crumbs (recipe below)
3 T extra-virgin olive oil
salt and freshly ground black pepper
2 medium onions, finely chopped
3 medium garlic cloves, minced
2 15-oz cans white beans, rinsed and drained
2 14 1/2-oz cans diced tomatoes, drained, with juices reserved
1 1/2 t minced fresh thyme or sage leaves
1. Move an oven rack to the top position and heat the broiler. Mix the bread crumbs, 1T of the oil, salt and pepper to taste together in a small bowl.
2. Heat the remaining 2T oil in a large skillet over medium heat until shimmering. Add the onions and cook until golden, about 8 minutes. Add the garlic and cook untilo fragrant, about 1 minute. Stir in the beans, tomatoes, 1/2 c reserved juice and thyme. Season with salt and pepper to taste. Bring to a boil, reduce the heat, and simmer until the juices thicken, about 5 minutes. Adjust the seasonings, adding salt and pepper to taste.
3. Immediately transfer the bean mixture to an 8-inch square baking dish. Sprinkle the bread crumb mixture over the beans. Broil just until the beans are piping hot and the crumbs are deep brown, 2-3 minutes. (Watch carefully to prevent burning.) Let settle for several minutes and serve.
Fresh Bread Crumbs
Makes about 2 cups
4 1/2-inch-thick slices stale country white bread (about 6 oz) torn into small pieces
Place bread in food processor and process until the crumbs are coarsely ground, about 1 min. Fresh bread crumbs can be refrigerated in an airtight container a couple of days or frozen several weeks.

I'm so excited! This is my first time being able to participate on this thread! I'm so sick of having a panty FULL of things that I bought for recipes and not making them. So, in an effort to spend less at the grocery store, use up my pantry items, more easily use up leftover items, make my life easier come dinner time, and all the other benefits that come with menu planning, I decided to bite the bullet and plan.
