View Full Version : Apple, Dried Cherry, and Walnut Salad with Maple Dressing

An OMG salad if I ever had one, mostly because of the dressing! I've made four different variations on this one since finding it on the Epicurious site last week. I've used pecans instead of walnuts, Craisins instead of the cherries, added grilled chicken, and added goat cheese. Any combination has been great!

APPLE, DRIED CHERRY, AND WALNUT SALAD WITH MAPLE DRESSING

"While visiting my sister in Mount Pleasant, Michigan, we had a delightful dinner at the Mountain Town Station Brewing Company and Steakhouse," writes Marge Frazier of Houston, Texas. "The salad with greens, fruits, and nuts was amazing. Plus it had a creamy maple dressing that was delicious."

Maple Dressing
1/4 cup mayonnaise
1/4 cup pure maple syrup
3 tablespoons Champagne vinegar or other white wine vinegar
2 teaspoons sugar
1/2 cup vegetable oil

Salad
1 5-ounce bag mixed baby greens (about 10 cups lightly packed)
2 Granny Smith apples, peeled, cored, cut into matchstick-size strips
1/2 cup dried tart cherries
1/2 cup chopped walnuts, toasted

For dressing:
Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper. (Dressing can be prepared 3 days ahead. Cover and refrigerate. Rewhisk before using.)

For salad:
Toss greens, apples, cherries, and 1/4 cup walnuts in large bowl to combine. Toss with enough dressing to coat. Divide salad equally among plates. Sprinkle with remaining 1/4 cup walnuts and serve.

Makes 6 servings.

I agree. I could practically drink the dressing all by itself. Yum! Just wondering -- did it mix completely for you or did it look a little off? Maybe I didn't whisk that well since it was not completely smooth.

I made the salad a few times and loved it.

I got the recipe from this BB. It was one of two outstanding items on my Christmas dinner menu. My out-of-town guests requested it 3 nights in a row! :rolleyes:

If I have large Granny Smith apples, I only use one. I too, substituted craisins which I first soaked in hot water then drained. I used toasted sliced almonds, but I am really anxious to try using the sugared pecans suggestion.

I totally missed this one when it was posted here. What a shame...that's a few extra months that I could have been eating it! :D I had it for lunch today with organic baby romaine lettuce. Yum!

DH was skeptical of this one because he thought the maple in the dressing sounded bad, but he loved it too. And the maple isn't really all that strong, imho.

Peggy, I've never had a problem with the dressing coming together, but I do notice that it separates when it's in the fridge.
