View Full Version : Wanted: Review of Potato Salad from Complete CL Book

I would like to make this potato salad for a potluck on Friday. I don't have the book with me, but I remember it was one of the "editor's choices". I did a search for potato salad, and found too many posts to wade through. Has anybody made this particular recipe. If so, how did you like it? I would also like any other light potato salad recipes you recommend. Thanks.

Found this one on the recipe search page and except for the light mayo, it's how I've always made potato salad (except I never measure anything!):

Classic Potato Salad

It's the same picnic/family reunion food your grandma used to make--only it's lighter.


Ingredients
1-1/2 pounds baking potatoes, halved
1/2 cup finely chopped red onion
1/4 cup finely chopped celery
1/4 cup sweet pickle relish
2 hard-cooked large eggs, coarsely chopped
1/3 cup light mayonnaise
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon salt
1/4 teaspoon black pepper


Directions
Prep Time: 8 hours, 40 minutes
Cooking Time: 25 minutes

Cook potatoes in boiling water 25 minutes or until potatoes are tender; drain and cool completely.

Cut potatoes into 1/2-inch cubes. Combine potatoes, onion, celery, relish, and eggs in a large bowl. Combine mayonnaise and remaining ingredients in a small bowl; stir with a whisk. Pour over the potato mixture, tossing gently to coat. Cover and refrigerate at least 8 hours.

Servings/Serving Size:
6 servings (serving size: 3/4 cup)

I've made the Classic Potato Salad (above) many times and love it. Tastes like potato salad should (not light at all).

I made it and thought it was just OK but that is because I don't like sweet pickles in my potato salad; I like dills. I will try it again, using dill pickles, the next time I make potato salad. It will probably be fine (for me) with this change.

I just made the "Old Fashioned Potato Salad" from Complete CL. It was simple and delicious! I will definately be making this again.
